Do you know how to properly crack open an egg? Or are you one of those people who wind up on occasion getting shells in their scrambles to show sometimes it's not so simple. Well, according to an article researched by "Today," there are some ways you can avoid a Humpty-Dumpty and do your eggs properly. I have always cracked eggs against the side of a bowl when preparing them for a meal. According to the experts the sharp-edge method isn’t always the best idea for neatness. And I have to agree, periodically I make a yolky mess on the counter or find a itty-sized piece of shell in my mixture. For less mess and fuss this food expert advises cracking eggs against a flat surface or a countertop. This egg-cracking technique is best for ensuring the yolk stays intact, and your shell is less likely to break off into the egg itself. Final tip from the chefs. Always use a separate bowl when using eggs for making a cake or other baked items. It's a safeguard against having any shell accidently fall into the mixture. Something I admit I don't do...well now I will. And if you do have a piece of shell floating in the egg mixture moisten your fingertips and just fish it out. It will keep the egg ooze from sticking to your fingers which might happen if they were dry. So, how do you break your eggs? Any yolk spills requiring cleanup or shell fragment excursions, lol? When we lived on the farm, we always broke eggs into a separate cup in case there was one that had started to go 'off'. Using a piece of eggshell to remove a tiny piece from the egg mixture also works well.

Does go off mean it's a bad one? Ah, eggshell to pick out a bit of eggshell. I'll remember that tip!

I have done this as well. More often with expired eggs. To date I have never had one that "went off." But I'd hate to ruin a batch with one bad egg.

I normally use the side of the skillet or bowl. However, I'm going to have to give the flat surface a try now. Curious!!

I've tried it a few times now. It works well. Just takes a bit of practice and I suggest use both hands

@dgobucks226 I always wash the eggs before breaking, at least if a small piece of shell fall inside the bowl it will not contaminate the egg.

Aren't we perfect Just kidding. I have used the side method with an occasional mishap. At least I know how to fish out the bit of shell now when that happens
