Meatloaf and Potatoes for Dinner Later

Decided to have a favorite for dinner a little later. Meatloaf with mashed potatoes.There will be some left over for sandwiches.
Sharing again how I make my meatloaf. I have had a few ask for the recipe.
There are so many different ways to fix this. You can also substitute turkey for the beef.
In a large bowl, combine beef, egg, onion, milk and bread crumbs or oatmeal. Season with salt and pepper to taste, form into a loaf and place in a lightly greased 9x13 inch baking dish.
In a separate bowl, add brown sugar, a tad of mustard (optional) and ketchup. Mix well and pour over the meatloaf. I add a lot of this topping, makes it very good. Bake at 350 degrees F for one hour.
Do you cook meatloaf? The recipe I use is easy and tasty.
The photo is similar to what mine looks like. My topping is darker since I add extra brown sugar to the ketchup.

@CarolDM I'd use onion powder instead probably. Just don't like the texture of onions lol

I do mine similar to yours. I also like garlic, bell pepper and mushrooms in mine.

I had meatloaf for dinner last night! My recipe is very similar to yours, but instead of just beef, I use beef and ground sausage mixed together. It was an old family recipe my dad taught me.

@LowRiderX I have to agree. Wasn't going to have a big meal but I need to use the meat in the freezer. This will last for days. Sandwiches will be good tomorrow.
