I wanted vegetables

We still had some of last night's chicken to warm up and eat. We did not put it in a tortilla or put cheese on it.
I wanted vegetables.
The other day I bought a container of raw, chopped, butternut squash and had only used half of it. I put just a little water with what I had left and put it in a bowl adding about a tablespoon of butter. I then sprinkled it with salt and pepper and ginger. I cooked it about five minutes in the microwave and it was perfect.
I wanted even more vegetables, so I got out a package of frozen broccoli and cauliflower. I cooked it until it was tender, again adding some butter, then also lemon pepper seasoning. It was just right.
So again a very healthy and flavorful meal. Do you ever crave vegetables?

@BarBaraPrz Thats funny. I got a seed catalog a few days ago. Even before I looked at them online they started popping up here.

@GardenGerty the question is what I do not like -- I do not like eggplant and okra. The rest I think I am okay. I love squash, lettuce, carrots and broccoli too

@GardenGerty That's hard to say really. From what I recall from past discussions, we mostly eat similar vegetables. We're not very adventurous when it comes to vegies. We don't eat okra, eggplant, bok choy but all the common ones - tomatoes, lettuce, mushrooms, potatoes, carrots, cauliflower, cabbage, Brussels sprouts (sometimes), broccoli, onions, sweet potato, peas, beans, capsicum.

@GardenGerty I cannot eat raw vegetables at all, I had lettuce two days ago and I have been sick two night in a raw.

We eat a mountain of vegetables here. I always enjoyed plenty of vegetables but since the health guidelines suggested eating more, and research has shown many benefits, and my partner has adopted a more healthy lifestyle, we get through more than ever!
Did you cook the broccoli and cauliflower in the microwave too? I have tried frozen broccoli before but had trouble cooking it so it wasn't soggy.

Yes, microwave too. Everything seems to come "steamable" now. So you put the package in the microwave unopened, and cook it about 4 or 5 minutes.No added water or anything like that. Open the package and put it in a dish. Season and serve.

The first time l visited the USA back in the 70's l was shocked at the lack of vegetables apart from sweetcorn there seemed to be very little else on menus so l am pleased to see much more is available nowadays. I craved them like mad back then! Your food sounds nice and tasty!

Yes, everyone seems to want corn. We do not eat it often. I know veggies are gaining importance.
