Making cabbage soup

I am about to make a huge pot of cabbage soup with crimini mushrooms. I’ve been craving it for a while and am finally making it. It will last me for five days for sure, which is great, as I love cabbage soup. I can eat it for a long time. And it also tastes better and gets more flavorful as the days go.
Aside from cabbage and mushrooms the soup will have sautéed veggies—onions, red bell peppers, beef tomato, and celery. I will add some butter, roasted sesame seeds, ketchup, and maybe a little bit of mirin. When it’s time to eat I will chop some fresh cilantro and add a big dollop of sour cream.
I can’t wait for dinner so I can enjoy a big bowl of the soup. Yum!

@porwest That sounds very tasty. Though some may say the less ingredients the better. But I see nothing wrong with adding many things, as long as they go together.

@lovebuglena When I make mine I use all kinds. Mushrooms, onions, potatoes, turnips, parsnips, carrots, brussels sprouts, diced tomatoes...a little bit of everything and I often change it up. THAT being said, I always also add hunks of beef, so it's technically a beef vegetable soup.

Love cabbage soup here too and always make a big batch. A hunk of cornbread to go with it and you got meal fit for a king or queen.

I wish I had thought of getting some cornbread. I usually have it with fresh black bread topped with butter. But this time I got a white Italian bread because I have Taramosalata Greek style caviar spread. I am thinking of having that with the cabbage soup. I hope it will go together. I never had the Taramosalata with cabbage soup before.

@Namelesss We added thin slices of heirloom tomato on top of the Greek caviar spread and drizzled some olive oil. I liked it together with the soup. And hubby seemed as well.

When I used to make miso soup I'd add tofu to it. But I've never added tofu to any other soup.

It is. I can eat it hot or sometimes just slightly warm, if it is hot out.

I love soup. Nice to have homemade soup for a change. Usually we eat canned soup. And I actually like canned soup because you can have a different one each day. Can't wait to eat the cabbage soup I made. Smells really good.
