I bought a jar of green pesto sauce at Lotus's (previously known as Tesco here) the other day. I never eat it actually but I'm interested to taste it. I don't know how to cook it though
Why is it green pesto? Red pesto exist too?
I'm thinking of boiling the spaghetti and then mix the sauce while it still hot after being drain. Or perhaps I should cook the sauce first.

I am Italian, green pesto is the most famous (garlic, pecorino and Parmesan cheese, basil leaves, extra virgin olive oil and pine nuts). The red pesto exists and it is A LOT more spicy it is made with tomatoes, red chili peppers, olive oil and almond.
The correct way is to cook the spaghetti and mix in the sauce when they are still hot, you must NOT cook the sauce.

You don't cook it. It's ready to eat and is either mixed into pasta (usually spaghetti) or a spoonful is added to some kinds of soup when serving.
It is green because its major ingredient is fresh basil. The other ingredients are pine nuts, oil and either parmesan or pecorino cheese.
Red pesto is made from sun-dried tomatoes instead of basil and is used in the same way.

We make our own fresh green pesto using a food processor because we have an over supply of sweet basil that needs to be trimmed constantly to prevent bolting or flowering. Of all the ingredients pine nuts is the hardest to find in our part of the world so at times I substitute garlic flavored roasted peanuts that I crush using a mortar and pestle

@prinzcy We use the pesto more on our toasted left over " pan de sal" a kind of Filipino Spanish influenced bread than on pasta. Yes on pasta we use carbonara white sauce or tomato sauce or paste to make red sauce.

The pesto should only get warm from the hot spaghetti! If you heat pesto, the basil will turn brown and won't taste as good.
Yes, there is also red pesto.
Uhm... the bad thing about pesto is that they are higher in fat and calories than tomato sauces. Just don't eat pesto all the time

@DaddyEvil can't say I like it, but I don't hate it either. Pretty interesting to be honest.

I like pesto sauce. I have two jars here but I really don't use it all that much. Maybe later this week I will have some.
