Creamy Chicken Pasta Casserole

Decided on a casserole for dinner. Had a small package of shredded chicken in the freezer. Pasta, cheese, diced tomatoes, seasonings, cream cheese and sour cream. Check, got all ingredients needed. Cook pasta. Brown chicken (or ground beef) and seasonings in skillet. Stir in tomatoes. Add to pasta. Then transfer to a baking dish. Mix cream cheese, sour cream, 1/2 cup mozzarella cheese and garlic powder. Drop mixture by tablespoonfuls over pasta. Sprinkle with remaining mozzarella cheese. Bake, uncovered, until cheese is melted, about 8-10 minutes. Such a great casserole. It can be changed according to your preferences. Rice can be used. Veggies can be added instead of the meat or with the meat. Casseroles are the best. Bake it all in one dish and dinner is ready.

I have done this with ground beef, and we enjoy it. I like your version, would probably be nice with turkey leftovers after Thanksgiving too.

I haven't in awhile but I love this casserole. Other meat can be substituted. I often make it without any meat.
