Do you like Vegetable Soup?

Good Morning/Afternoon/Evening to all my dear mylotters
Today, I can`t think of anything to prepare for dinner because I had a heavy breakfast but my husband suggested that we can have some vegetable soup. This is very easy to make. I just fry the potatoes and carrots with garlic and onions and then add some water. Sprinkle it with salt and pepper to taste. Let it boil until the potatoes and carrots are soft. Then there you have it. A vegetable soup with not so much vegetable in it but you can add whatever you like. We only have potatoes and carrots available now.

If you boil everything together, it's called 'Eintopf' in German. My mother loved to make Eintopf but was rather strict, a Bohneneinopf, for example, had only beans and potatoes, for example, whereas I put everything in I have and it is always good.

@MALUSE Oh yes. I put with my soup that Gemüsebrühe, I like the taste of that. I will write it down in my cook notebook in order for me to remember that. Thank you for helping me out enhance my vegetable soup

@m_audrey6788 If you use different kinds of vegetables, you must keep in mind that they need different lengths of time until they're soft. Green beans and carrots, for example, need longer than potatoes.
Don't forget to add Kohlrabi (no English word for that) and Paprika if you like the taste. (I do like the taste but have to belch for hours after eating it. So I don't add it).
When I add water, I always add also half a teaspoon of Gemüsebrühe which I buy in a small glass.
I always make more than can be eaten. The rest will be warmed again the following day and tastes even better!

I hope you don't mind my writing this in German. It can't be translated so that it rhymes.

I like homemade vegetable soup, and I make rather good veggie soup. I don't have a recipe for it, and it can vary drastically depending on what the season since I tend to try to shop locally and seasonally. That doesn't always happen, especially since moving to this area/ the pandemic. However, I am working on increasing my purchases from local producers.
Carrots usually do factor in, though. Frozen peas, too, often make an appearance.

@m_audrey6788 They don't have dill pickles in Germany!? They must! They are sour pickles with a savory taste. Some people use the spice dill with fish sauces and things like that as well.
