The last pork loin chops I cooked were dry and tough. Not sure what I did wrong. I am marinating some today.
I will make a sauce with peppers and pineapples and serve the pork with rice.
I am, in fact, cooking up rice to portion and freeze. Having meals on hand or parts of meals on hand in the freezer really help with meals on work nights.
My younger sister used to marinate pork chops, but I do not remember what she used. My first husband said it made him feel nauseous to smell it, but I know it was nothing horrible. My sister is deceased, so I cannot ask what was in it.
I am just making up my dish as I go along.
Really, that is about all I have done so far today, besides take an early morning nap and be online.
Unfortunately so much of what I read online is depressing. I would rather come talk to you guys. It is healthier for me.

One of my daughter's father in law loves to make jelly and jams. He made satsuma jelly one year and nobody liked it. Of course, we ended up with several jars of it and one of the things I used it for was marinating pork chops! They were very good and different from the norm!

I am not sure what satsuma is, but yes, a jelly sounds like it would make a tasty marinade.

@GardenGerty A satsuma is a small citrus fruit that is similar to an orange. Only they are usually a sweet-sour flavor.

Here my daughter has a meat pounding thing she uses like is used on steak to make it tender. She uses that on pork chops too and it helps.

I marinate pork chops in beef or chicken broth and then bake them with potatoes and green beans. I like to put spices over the top of everything, add a can of Campbell's Cheese soup, portioned out over everything, put foil over the pan and bake at 350 for an hour. It comes out tender and delicious!

The meal was good, kind of "fake Asian" with soy and other things in the sauce and served over rice.

Best of luck with the pork chops, I cannot cook pork chops so I do not have them, My mom used to take pork chops and dip them in egg and then coat them with bread crumbs and sauteed them in a pan, Her chops were so tender and delicious, I just cannot figure out how she did it probably standing over the pan,

@GardenGerty I meant to say he does use it in marinades. Usually my fingers do the opposite - make things I want negative into positives.

Know what you mean. My chops come out dry too. My Mom & grandparents cooking wasn't that way, only mine dry!
So online search for juicy chops I went. Found a mayonnaise recipe. Tried it but twerked it to my taste. Came out, pretty good.

They were tender. I ended up cutting small cubes of meat because that is easier for hubby to eat.
