Homemade Chicken Nuggets? 03/28/22

Maybe they are chicken nuggets? Maybe not. Either way, I used a "recipe" for the topping I use a lot for breaded pork and chicken that is usually pretty good. Call them what you want, they are in the oven as we speak. I cracked two eggs and set that aside. Then I had some chicken breast cut into "chunks" or "nuggets," whatever you want to actually call them. I made a mixture of bread crumbs, onion powder, garlic powder, Parmesan cheese and pepper, with some shredded cheese added into the mix. I dredged the chicken "chunks" through the egg and mixed it up well with the breading mixture, set the oven for 375 degrees and will cook that for about 45 minutes to an hour (keeping an eye on it of course for doneness). For a side we will have a veggie and some macaroni and cheese. I think these should be good. What's for dinner for you tonight?

That sounds very good, I used to take chicken fillets and cut them into strips and the egg and bread them and fry them up. I had very little today some sausage patties and tater tots.

Those look great. Skipped dinner last night. No idea what to have later. So far I've had oatmeal for breakfast.

I can't remember the last time I skipped dinner. Usually it happens if I have a late or particularly heavy lunch though.

Oh yum. That sounds like a winner to me and much better than frozen and processed chicken nuggets/tenders. We had jambalaya tonight. It was pretty good.

Yeah. The ones pre-made can be a bit of a mystery for sure. lol. Hmm. jambalaya...haven't made that in a while. On my list.

I misjudged the time when I wrote this. That would have far too long. About 20-30 minutes even with the raw chicken. lol
