Vince has made a sponge for our friends

Tomorrow, we are heading off again to go ‘glamping’ but this afternoon, good friends are coming for a cup of coffee. They have been in the eastern states visiting relatives and we’ve been house-sitting so we haven’t seen much of each other. Vince has made a sponge which you can see in the photo. It now has jam and cream in the middle and on top. I might have put fruit on top but it’s not my cake and I’m sure it will be very edible. I’m hoping I remember to take a photo of it before it gets cut into pieces. But, in the meantime, it looks pretty good, doesn’t it? I think it is only the second one he has ever made. I approach sponge-making with trepidation but not Vince. But contemplating failure doesn’t seem to be in his make-up. lol

@judyev I’m glad you can approach Vince without trepidation. Sponge looks great and I’m sure it will look even better dressed in jam and cake as most of us would. Enjoy.

I don’t like jam filling at all but the cream sound good. I’d love to see the after photo. I’m not sure if I’ve ever heard of a sponge. I’m thinking maybe it’s like pound cake or angle food cake.

I like them too. I like light cakes and puddings rather than heavy, stodgy ones.
