I am resting after standing in the kitchen for a long time.

I went to the fridge where I had kept the rest of the pig´s feet in its water. I had thought about eating the rest and keeping the broth to make delicious chickpeas. But then I remembered that My freezer is almost full and decided to go to plan B. There is a cheese recipe that you can either make with pig´s feet or with veal´s feet. I love the one done with veal´s feet but I can only do it when I can take it for a stat with Dixie. They love it, even Dixie who normally does not eat veal. As I live alone, it is too much to do it just for me. So I decided to make smaller cheese from the pig and spent a long time taking the meat from the zillion bones that pig´s feet have. After that I had to rest as I am now. I boiled red and green sweet peas, an egg (hard boiled), half a carrot and as I don´t have black olives I´ll use green ones. But I´ll put everything together after a while. I also cleared a rack in the fridge to place small glass pots there. This dish is very healthy as it does not have fat and has lots of collagen. Have you ever had it?

@wolfgirl569 I ate that for lunch today. The next time I buy pig´s feet I´ll eat them with mustard of green sauce (dicen onions and cilantro leaves). It took me ages to take off the small bones from those feet and the cheese made with veal foot is better.

@celticeagle They have to be cooked, deboned and cut up. They don´t look like that picture except if you eat them only cooked with mustard or green sauce.

I've never had it but I would try it! I have seen pigs feet at certain markets (maybe in jars too?) but I wouldn't know what to do with them. Collagen is good .

@much2say It is a salty gelatin with bits of meat , egg, sweet pepper and olives inside. It is a broth when you make it but turns into gelatin in the fridge. I can make a sort of cheese with chicken bones too.

Latvians make a very delicious jelly-like cold dish with pigs feet and other parts. It has a delicious broth that gels, meat from the pig, and carrots, and boiled eggs for decorating. Here is an example

No, not that dish. In fact this is the first time ever hearing them used like that. We used to just boil them, pour vinegar on them and eat. But you sure make me want some.
