I'm Planning Pancakes for Supper Tonight

This sounds like a stupid thing to cook, for a diabetic. But, I use a specialty flour, eggs, oil, salt, baking powder and milk. I've made these before and consume only one per meal.
Jay already had pancakes made up in the freezer, for himself. Along with this, we will have turkey sausage and eggs. I always include decaffeinated coffee, during the evening meal.
Jay drinks milk, so that will be our evening meal.

I don't like pancakes. When Pretty was little, she wanted them every morning but I hated cleaning up after her and the syrup. Now she makes them about once a month and cleans up behind herself.

If I bother with a dinner menu, it's not appreciated enough. So, I cook simple meals and everybody is happy!

Sounds fun to have pancakes for dinner. Back in the days, my brother and I would make breakfast for midnight dinner. That's how crazy our meal plans had been.

Glad to know about your meal. We have pancakes here but it's slightly different in texture. It's very thin and brown white in colour. It tastes sweet by itself. It's a parsi dish called Chapat

Every once in a while, my son will ask for waffles or pancakes for dinner. I have an old school waffle iron and he swears the waffles taste better with that one than the new little plastic ones or the ones in restaurants. I usually fix a breakfast meat with them, or eggs, or even both if he is really hungry.

Even though it's not your photo, those pancakes look delicious. Funny bit you must have read my mind because I have had a hankering for pancakes for a few days now!
