I´ll make a giant potato salad for lunch. / myLot

One of the things I like about spring (finally about to come) is the change of food. I hardly eat salads in winter. I feel chilled all over just to look at them. But in spring, summer and fall there are many meals that can be done with cold food. Today, while I was unhappily watching news on TV, I put some potatoes to boil with an egg. I got the egg out sooner but left the potatoes boiling until done. Now, after I post this, I will go to the kitchen to make some mayo. I have a little leftover mayo but it is not enough. So I will add that first and then use the new one. I have the hard boiled egg, green pitted olives and dill pickles. I could wash a couple of lettuce leaves and use the last avocado I have. It is very ripe and I should use it soon. Then I´ll eat and have a wonderful nap. See you later, friends.

When my eyes first caught your title I SWEAR I saw potato sandwich and I was like WHAT??? Potato SALAD makes perfect sense. I love potato salad.

I love potatoes in many ways but I don´t think that I´d care for a potato sandwich.

Potato salads can be made in several different delicious ways.

@marguicha That's the fun thing about potato salad for me. There's Grandma's style, Amish style, American style, German style, deviled egg style...fun to change it up a bit as well. I have my own personal recipe and everyone says it's unique. The only odd thing, if you want to call it odd, that I put in mine is oregano and Italian seasoning. But it's very good. I use a combination of both Miracle Whip and mustard, pickle relish, onions, diced eggs... If I recall right, when I experimented around with the recipe I was taking ideas from several styles I liked. It took me a few batches to get my own recipe to the final one. But over the years it has become a staple and I make it a lot for parties and whatnot and it always goes over well.

@porwest I always make it with homemade mayo. And with the sort of dill pickles I like, diced finaly. I add mustard when I remember. And a diced hard boiled egg when I remember to cook one or 2 with the potatoes. But yesyerday I had green pitted olives so I added that instead of the pickles.

@celticeagle Exactly. When my grandchildren were small, I used to make 3 different potato salads for a barbecue. With mayo, with no mayo; with dill pickles, with no dill pickles. You name it.
