A dish of pasta with pesto for lunch.

Pesto is just too good!!! I remember that my grandmother ground the basil in a mortar. We did not have a blender then. She added the oil little by little until it was just the right thickness. She did not keep part of it as I do in a freezer because we did not have one. I have so many recipes in my mind that started being very difficult to make and that I later simplified according to the times. I buy fresh basil when it is in season, make pesto in a blender and keep it in tiny servings that last a year. Now I could buy basil at the supermarket but it is still too expensive. And I still have pesto from last year. So I boiled fettucinni, added more olice oil and pesto and loads of Parmesan cheese. I love Parmesan cheese and I don´t add salt to pesto prior to freezing it. Later, the cheese is enough to salt the dish. Now I´ll eat the last bits of ice cream I have left. I will have to buy some yummy things later on. I don´t have ice cream and the best cheese I buy has a tendency to disappear This time I boiled just the amount of pasta I needed. So this evening I´ll eat something lighter. How about you, friends? I've got ground beef thawing but have no idea what I'm going to make with it after while. I'm sure Pretty will ask me to make something we'll both eat. I hope you're having a wonderful day.

Once in a while, when I want to work more, I make meatballs that I cook in broth. They make delicious soups.

Basil is so nice smelling. Parmesan cheese is good on anything. I just had coffee and a piece of warmed and buttered banana bread.

I love to add Parmesan cheese to the dressing I make for lettuce salad. In fact, as you say, Parmesan cheese is good on anything.

I have a bit of cooked chicken salad. I´ll halve and stuff an avocado with the chicken and some mayo and see if I still have some lettuce to serve it in a bed of shredded lettuce. I don´t need more today. That pasta was a big meal.

I stretch out the basil when I make pesto by using a lot of spinach leaves, and just enough basil to flavor it. The spinach helps it to keep its green color after freezing too. I'm not sure what I'm making for dinner tonight. I have some chicken leg quarters thawing, but I'm not sure if they'll be thawed in time to be cooked tonight. I might make scrambled eggs and biscuits and gravy for dinner instead, if I have to come up with an alternate plan.

In my country basil is quite cheap in season, maybe as cheap as spinach. I thaw meat by placing it in a sealed plastic bag and put it in lukewarm water. I never would use the microwave oven to thaw meat.

@marguicha I really dislike using the microwave to thaw meat too. I have this thawing in the refrigerator and it's been there since Thursday evening. If it's not thawed enough today, I'm sure it will be by tomorrow.

I like pesto too, but I don't have it too often. I like to have it on hand though in case a recipe calls for it.

Your diet is divine. I ate junk Marguicha..but I did make one taco beef salad..it was tasty.

I love Pesto too though we're mostly inclined to make tomato or cream based ones here in the household. Sometimes, when our taste buds crave it, we make pasta as simple as an Aglio Olio pasta or lemon pasta.
