Pesto is just too good!!! I remember that my grandmother ground the basil in a mortar. We did not have a blender then. She added the oil little by little until it was just the right thickness. She did not keep part of it as I do in a freezer because we did not have one. I have so many recipes in my mind that started being very difficult to make and that I later simplified according to the times. I buy fresh basil when it is in season, make pesto in a blender and keep it in tiny servings that last a year. Now I could buy basil at the supermarket but it is still too expensive. And I still have pesto from last year. So I boiled fettucinni, added more olice oil and pesto and loads of Parmesan cheese. I love Parmesan cheese and I don´t add salt to pesto prior to freezing it. Later, the cheese is enough to salt the dish. Now I´ll eat the last bits of ice cream I have left. I will have to buy some yummy things later on. I don´t have ice cream and the best cheese I buy has a tendency to disappear This time I boiled just the amount of pasta I needed. So this evening I´ll eat something lighter. How about you, friends?
