Using Stuff Up

I am pretty sure @NJChicaa will probably head right to the toilet to cram her face in there and puke, but I had some leftover pork from that rolled pork roast I made a couple of days ago and used it to make chipped pork. I also had a couple of zucchinis left to use, so I cut those up. I had some limp celery and I used that up. I heat up a little oil in the pan and tossed in together the zucchini, onions and celery and cooked that up a bit. Then added in some minced garlic. Tossed in the cut up pork and some of the potato and carrots I had left too. Warmed that up a bit then added some salt and pepper. Added in some frozen corn. Cooked that up a bit. Then added in chicken broth, Worcestershire, garlic and onion powder and some Italian seasoning. Stewed that for a bit then added in a packet of gravy mix. Normally I'd just make a rue, but heck, I had the packet so I used it for ease. Toasted up some bread and served the chipped pork on top. It was delicious and we nearly gobbled it all up. What did you have for dinner last night?

Interesting. Did your really need the gravy or was that too make it creamy on the bread. I like to use up food to but I don't think I've ever put so many different meals together. I'm sure my husband wouldn't eat it.

@porwest I have heard of that before. I'll have to ask my husband if he's ever had a version. I want to find some ideas of things to make for supper where I don't need to have meat for every meal. For most of my life I've only been home to cook supper twice per week since I was working during the supper hour mostly.

@MarshaMusselman For me there are only two dishes I can think of that I don't use meat for that I cook, and those would be spinach lasagna and eggplant parmigiana. I almost have to have meat.

The dish is actually called Sh*t on a Shingle, and the gravy is to soak into the bread and make a nice textured, layered meal of meat, veggies, sauce and bread. It's really good. There are probably a hundred different ways to make it from gravies to cream sauces. You can use corned beef, regular beef, chicken, turkey, pork... And it is DELICIOUS!

NAILED IT. Sh*t on a shingle is EXACTLY what I call this. But I wasn't sure if anyone would recognize it from that name. But yep. That's what it is.

@porwest yeah, I was raised on the stuff that's why I don't like veggies today cause that's all we ate, but when you had nothing else better it was the best stuff to eat.

@LadyDuck That's true of most things for me, except when it comes to soups, stews, casseroles and things like that, and in a way this dish sort of falls into one of those categories.

It sounds like it was similar to a stew or a very thick soup. We don't all cook alike, that's for sure. What one person will eat, the next will not. It's good to be inventive to use things up. The main thing being, you both thought it was good and enjoyed it.

Chipped dishes are very common. But yes. Everyone does it a little differently. Chipped pork. Chipped chicken. Chipped turkey. Chipped beef. All served over toast. I should have included a picture. Maybe the next time I will.

@porwest I baked 2 whole chickens and picked them off, froze the pieces in portions for casseroles, soups, etc. yesterday. I tossed all the bones in the crockpot with some spices and made the best broth...strained it and most is in the freezer with the chicken. I used some of the chicken today, and one container of broth, to make chicken tettrazini (normally people make it with turkey, but hey...it's chicken!) It tastes delicious. My son had ask for it, he loves anything with pasta in it. We had broccoli and salad, too. It all tasted fine to us!
