Well, here we are 35 days later and we had to use the little bit of celery we were able to grow from the end we put in a small bowl of water. We never got any real stalks, but I was told we could eat the leaves and bits and it is all good flavor. So, that is what we did.
The bottom piece was beginning to rot and the grown pieces began to wilt, so I assumed it was time to snip off the pieces and use them.
I decided to use them as a flavor garnishment on some baked chicken thighs, and I think this should be good.
It was fun to grow this, and I will definitely do this again with the next head of celery I buy. Even if it is just for some garnishment and a little extra flavor I think it is worth it. But unfortunately there will be no more updates on our little celery.
He is going in our tummy tonight.

I did, and I never thought to use or eat the leaves until @MarieCoyle mentioned she did. I always threw the other bits away. No more. I will eat the whole damn celery. lol

@MarieCoyle Before chatting with you about this, there were so many parts I'd simply throw away. No more.

I've been doing that celery thing for a very long time. Some will grow taller than others, but its nice and fresh to cut up and enjoy.
When I buy a big stalk of celery, I bring it home, cut off the root part to sprout and grow, and clean the rest of it. I have tried many methods of storage to keep it as fresh as possible, it gets put in a glass loaf pan (Pyrex type) that has a lid. I cut off all of the celery leaves. I put them out on a cookie sheet that is lined with a paper towel for a day or two. Then I remove the paper towel, and dry the leaves. I could use the dehydrator (small one) but sometimes the tray of leaves hangs out in the oven every time I get done with it--when I turn it off after a meal or baking, I put the celery leaves in there to dry. When they get good and crunchy, they are done, and I store them in a glass jar with a lid. Good for soups, casseroles, meats, you name it...like you said, eat the whole thing. It works.

Your dinner certainly looks good with your little celery garnishments. It certainly was an interesting experiment.

It's weird about the stalk, sometimes mine grows stalks, sometimes, not much of one. This one is about 5 days old. My son, who is usually the quiet type and doesn't say much, walked past it on the counter, and stopped to check it out. He thinks it's pretty cool to grow some food or seasoning out of a scrap!

You can truly say "homemade"! Looks like you got quite a bit of leaves - it went to good use
