A coworker gave me some large zucchini squash. I like it, but there is only so much of it you can eat plain. I used to jazz it up in lots of different ways when I was way younger. Tonight I layered it with some mild Italian sausage and bell peppers, lots of cheese, and some jarred pasta sauce. It is in the oven now. That is what is for dinner tonight. I still had more, but I just cooked it in the microwave to eat as a side dish on another night. I am just waiting for my timer to ring.

I used to use it in lasagna, bread and fruitcake. Then again, thickly sliced and dipped in egg and bread crumbs, then fried in butter is good.

I have thought about slicing some straight ones longways and using it instead of noodles in lasagna. I do not fry things very often, but I may be doing that with some.

I quite like zuchhini but we rarely have it. I wouldn't really know what to do with it. I hope your meal is tasty. It certainly sounds like it will be.

I like to brush thin slices with some olive oil, maybe sprinkle some herbs, and grill. Or saute gently with a little onion and garlic. Also use it in cookies and tea-bread.

I prefer yellow squash to zucchini. I eat it when it's in a Meals on Wheels lunch; but it's not a favorite! Your dinner sounds good though. Have a good day.

My great niece makes a casserole with zucchini and yellow squash together, and cream and cheese and all kinds of other unhealthy, tasty things. I think of Meals on Wheels as being rather bland. They serve a purpose, and are healthy, but could stand to kick it up a notch. You do get some that sound really good though.

We have been zucchini blessed again. I made chunked zucchini with meatballs, topped with peppers and onions and mushrooms. Red pasta sauce. Cheddar cheese on top. I still have some zucchini left that Bob got from a library trip. Need to do something with it. Maybe with chicken, mushrooms and alfredo sauce.
