For some reason I have been inspired to cook the last day or two. I am making soups to put in the freezer for quick additions to our meals. On the stove right now is a Tex-Mex chicken soup. Not tortilla soup, as hubby does not care for that. In the deep freeze is a container of chicken and veggie soup, heavy on spinach that I made Thursday night. And a container of Beef chili I made today. We will eat the chicken soups as sides with other foods, like burritos, or hot sandwiches. I have one more to make that is chicken, tomatoes, and okra with a little rice and Cajun seasoning. I also would like to make some ham and beans this weekend. Have I made any of you hungry yet? I may do desserts next.

The ham and beans sound really good. I remember a restaurant we used to have near here called Souper Salad. It has about six soups a day available, with about six different kinds of salads (pasta, fruit, green…) It was so good.

I've been busy making soups, too, though I don't chop meat in. I'm finding Mac N Cheese paired with deviled eggs to be a tasty Fall supper. I also grab some broccoli from the freezer to finish the meal.

Tex Mex chicken soup sounds good. May have to look that one up and incorporate it into my repertoire. Last night I made a beef vegetable soup. It was good eats.
