I made seven dozen mini-quiche today

Vince lost two brothers in two days. One has been put to rest and the other will be buried on Tuesday. The family is catering for the wake and today I made 8 dozen mini-quiches to help out. I’ll take seven dozen with us. They’re in the freezer at the moment. Wakes are tricky as it’s impossible to know how many will turn up. The brother was a Clerk of Courts in the town and will be remembered by many, I’m sure. Two of the seven children have fly-in-fly-out jobs on remote mine-sites which accounts for the delayed date for the funeral. The photo is of the mini-quiches that I made on a different occasion.

They shared a birthday three years apart but were much older than Vince. They'd both been unwell for quite some time.

@JudyEv I was wondering if there were instructions and whether they were being followed. I just didn't think it would be my place to ask questions like that. (I've left instructions with Pretty and with my brother and SIL but I'm not sure they'll follow my wishes.) Sometimes instructions by the loved one are followed and sometimes they're completely disregarded.

We haven't been very involved with this one but I imagine with seven children, there have been a few interesting conversations. It probably helps that he was a very staunch Catholic as several of the children quite staunch 'others'. I understand he left strict instructions so that would be helpful.

It's probably just the photo colour but they do 'brown up'. I use tins that are not quite as deep as most muffin tins.

You have prepared a good many of them, and should they not all be eaten, surely you and Vince can take home some and even share them with his other siblings.

It's easy to have at least two or three so I think they will all be eaten. There might be 100 or so at the wake as his brother was well-known.
