Just ANOTHER Rainy Day

Happy Wednesday Everyone! yup, it's another rainy day here in my little corner of the mylot world. Looks like May will be ending with rain and if the forecast is right, nicer weather will be here next week. I don't know if this has been a record breaking rainy month but it certainly seems like it has been.
My oldest daughter is going to Hobby Lobby this afternoon as she needs supplies for an order she got for her Etsy shop. I took a glance at the Hobby Lobby weekly circular online and lo and behold....yarn is on sale!! 
I'm thinking I might take a ride with her and get some. Do I need it? Of course!! 
It will also be a good opportunity to buy a nice frame for my grandsons wedding photo.
Tonight is pasta night so I'm going to air fry some eggplant cutlets and have them with spaghetti. The sauce is in the crockpot so it will simmer for the next few hours and later today I'll do the eggplant.
But, right now, I'm enjoying my coffee and breakfast (cottage cheese with cut up cantaloupe).
How's your day going?

It is raining here as well continuously.
Talking of Hobby Lobby you took me back to a memory that I have. I have been there and remember how my nephew and his wife who live in the US took me there and told me to spend time until they retrurned from somewhere.

We've had so much rain lately that I think it's safe to assume that we don't have to worry about a drought.
Thats a funny memory of Hobby Lobby.

It rained most of the night and into this morning but finally stopped. It's still cloudy and nasty looking outside but no more rain until tomorrow. It's 60F but it feels chilly. I'm glad we don't need to go anywhere today, not that we could, anyway. My vision is too blurry for me to be willing to drive anywhere. Maybe later this afternoon. We shall see.
Spaghetti sounds good for dinner. I may thaw some ground beef and make that.

@Marilynda1225 We have the same temp but we're supposed to reach 70F by late this afternoon. We've been under flash flood watches/warnings the last few days.

@Marilynda1225 Yes, both afternoon cups of coffee warmed me up and helped my day greatly.
It has been such a cool, wet and windy May, but near the end of the first week of June we should feel the heat and humidity. They are calling for a very hot summer.

Rainy day here....I have only just got outside to do my daily walk. I missed it yesturday because of the weather.
I have never heard of eggplant cutlets .....how do you prepare those....

I slice eggplant into circles, dip in bread crumbs and then put them in the air fryer. I used to fry them in oil but this is way more healthy

@Marilynda1225 sounds delicious. i stopped having eggplant because of the amount of oil they were soaking up.i use it only when making moussaka.

That's too funny because that's where I just sent my husband today for the same reason. Well not etsy because I shut that shop down but I have an order that needs done lol. It's rainy here as well. I'm getting so tired of it and I know my cats are too.

Never had eggplant cutlets. I haven't had eggplant for ages though. Maybe I will buy one .and make like a skinny eggplant Parm or something Have Fun at Hobby Lobby

I love eggplant and it's so easy to just cut it in slices and bread it. The air fryer makes it crispy so no added calories with the whole frying in oil. A skinny eggplant parm sounds delicious

Eggplant is one of my favorite vegetables. But I never have them with spaghetti. Maybe I should try it someday.
