I received another 18 duck eggs today

My coworker must have a zillion very prolific egg-layers because she told me that she has so many eggs she could never use them all. I still have 6 left from the first 24 that she gave me. I didn't even ask for any more yet but a student arrived in my classroom this morning with 18 more.
Hey I'm happy to get them especially with the current price of eggs. Duck eggs are even more expensive than chicken eggs. So far I've had good luck baking with them as a straight 1:1 substitution. They are a bit larger than chicken eggs but that hasn't seemed to make a difference. . . at least yet. We shall see how they do in ice cream soon.

I love duck eggs. They are really good, I have a friend who shares her chicken eggs with me. Her neighbor has duck eggs. Sometimes they swap, and when they do, I usually get duck eggs as well. You love to cook so you won't let them go to waste, I'm sure.

Do you only use the duck eggs in baking? I'd try eating some scrambled and boiled.

@NJChicaa I add cheese to my scrambled eggs and it can make them a bit rubbery, too.

Duck eggs are really good
We get them from time to time from someone who comes round the doors selling them.
Don't know if I have ever had them in ice cream.
Should be just as good ice cream if not even better

We never had ducks on the farm so I don't have much experience with them or their eggs. I know the eggs are a bit larger. I thought they were a bit stronger tasting. Have you ever scrambled them?

Maybe you can share with your neighbors if you have too many. I have one egg left in the fridge which probably should be thrown out.
