Casseroles

That is what cooking has been today, casseroles. I made something I have not had in many years, tuna and potato chip casserole. We ate it both for lunch and supper. Bob had never had it before. After supper tonight I put together an egg casserole. Bob and I will eat it for at least two days. It is full of vegetables. I will go to bed once the casserole is cool.

It is often like a quiche with no crust. Or if you make it with bread it is often called a strata. Basically I saute whatever veggies I have and put them in a baking dish. I pour eggs and milk beaten together over the veggies and bake about half an hour.

For an 8x8 pan I used 8 eggs and a cup of milk and about a cup of grated cheese. Mixed all together with seasoning and poured over sauteed veggies. You could put egg and milk over cooked rice in a pan--with sugar, and have a baked rice pudding.

The weather is cool and rainy so it was a good time for them. I did not expect Bob to like the tuna and chip one, but he loved it.

@GardenGerty We started getting the storms around 6:30 am here. You could have kept them there for us. I hope there wasn't any damage at your house. No damage here but they sure are noisy!
