Happy Wednesday Everyone! since I like to think of myself as an optimist I'll say today is partly sunny (rather than partly cloudy
)
My morning is off to a good start. We're having pasta for dinner so I have the sauce on and it will simmer in the crockpot for the next few hours. It's my "go to" way to make my sauce/gravy these days. It comes out just as good as making it on the stove top except I don't have to keep stirring or worrying it will burn the bottom of the pot. I make a big batch and then divide it into portions for future meals and freeze it. Cook once...eat more than once is my motto these days.
Today I am taking my new medication for my knee arthritis. Says to take it twice a day with food so I decided to take the first with breakfast and the second with dinner.
I got such a good nights sleep last night that I feel energized this morning.
Right now I'm taking a break from the things I want to do today. I poured my second cup of coffee and will chat here for awhile.
Not exciting but that's what's going on here.
How's your day going?

It's going OK, we have had some rain this morning, but it looks like the sun is trying to come out now. I hope it succeeds! I will be going out in a bit to pick up some meds. do some shopping and off to the writing group. The only thing is I may have to stop at the store twice, as I wanted to get some kind of ice cream treat..and I can't have that in the car while I go to the group.

Guess it depends on what you're cooking. I've had a few things burn a bit so now I spray it with cooking spray if I'm making something like a roast, etc. Oherwise if it's got some sort of liquid nothing seems to stick or burn

The cooking once and eating a few times is my go to now. Gone are the days when I would slave over a hot stove

@RebeccasFarm I feel bad for her as the pain is very debilitating. I'm finding out how expensive physical therapy can be in addition to the meds. The meds i was on were covered but the new one isn't. Don't know if I will pay for this every month or go back to what I was taking.

If I could stand for longer periods of time I would probably still cook on the stove top but my knees are so bad that I'm limited to shorter standing times
Like you, I tend to make meals that have enough to freeze for future meals. Sometimes my daughter and I don't feel like eating the same thing so we just pluck something out of the freezer and heat it up.

@Marilynda1225 Our kitchen is small so I parked one of the dining room chairs across the room from the stove. I start whatever cooking and then go sit down until I think I need to check it, stir it and go sit down again.... Sometimes, if my sciatic nerve isn't bothering me, I walk back and forth across the kitchen while I'm cooking something. I set a timer every five minutes and check on what I'm cooking.
I try to keep enough variety in the fridge and freezer so no two meals are the same unless I want the same thing again, like the pork roast, potatoes and onions. Pretty and I both kept going back to that until I ate the last of it for breakfast yesterday morning.

I understand about the stirring and worrying. I used to hate that. Especially with gravy. Have a nice Wednesday.

The weather is very good here for sleeping easily.
I love that about a slight drop in temperatures that we feel at this time of the year.
I am glad that your knees feel a bit better today.
Have you contacted your family member that could offer you therapy?
My das this week are nice and easier going than usual.
My son and his wife are on vacation, so Grandpa is staying home for most of the day.
He was asked to go over this morning and help with some outdoor project that our son had to undertake. When Grandpa is there, the twins won't leave his side, and they helped with the outdoor work.
I just finished facetiming with him and Willow, and he told me that he had to clean up the kitchen from supper before they could take a walk to the park-so I suggested to Willow that if she wanted to help Daddy in the kitchen like she does Grandpa, they could go outside sooner.
That little girl will empty the bottom rack of the dishwasher for Grandpa and stack everything neatly on the counter, and now she is able to put the cutlery away in the drawer.

@Marilynda1225 Thank you.
Willow has a patient and pleasing personality.
She loves to help out, whereas Harper will ask questions and why why why.
Today he went over and was lying on his back under the sink changing the taps for them in the kitchen, and Harper came along, and was asking questions, but he couldn't hear her, so Daddy told her to ask more. She asked what tool he was using, she had her tool box with her (imagine) and he told her a wrench, and she jumped on him and reached in with her wrench. He just about jumped out of his skin as he wasn't expecting her to do that. But he laughed it off. She asked why her wrench did not fit.
And the pleasing little Willow was suggesting that her Sissy leave Grandpa to finish the work and sat there waiting for him to do that while holding a rag, just in case Grandpa needed one.
I look forward to hearing about the progress after the weekend, I hope that your cousin can give you good suggestions.

Willow sounds like she's quite the helper in the kitchen. I always enjoy hearing about the girls and what they're up to. They're growing so fast it's crazy.
I talked to my cousin and we're going to do a face time over the weekend. She won't be working then and will have more time. I'm sure she'll have suggestions for me
Glad that your week is going easier than usual. That's a blessing

I remember when that window got broken. I'm glad it's finally fixed before we head into the cold months. You've been waiting a long time for that window.
So far my knees are less painful but today they are a bit more achy but that could be due to the change in weather.

@Marilynda1225 They had a piece of plywood over the window; so all was good. I'm sorry your knees are bothering you.

I bet you're happy to see the sun after all that rain. It's fairly hot here too but it's summer after all so not a surprise
