Winner, Winner, Chicken Dinner

Happy Monday Everyone! it's a beautiful summer day here in my little corner of the myLot world. The pup and I enjoyed our coffee time out on the deck earlier this morning and now she's curled up on her blanket and I'm having coffee #2 and chatting here for awhile. The only time I can enjoy my deck is the early morning and then the sun just beats down and it's too hot. No matter what size umbrella I have (or had) doesn't work as the sun comes from the side and an umbrella only covers from above. Even with an umbrella that tilts it doesn't do the trick for shade. Every year we say we have to find a solution. Anyway, that's neither here nor there Seems that Mondays wind up being our night for chicken. We've been getting these packages of already cooked, fire roasted chicken breasts at Sams Club. Each piece is about 4 ounces which is a nice size. Tonight we'll be slicing up two breasts and putting them on a salad. I love a fully loaded salad (beets, olives, cucumber slices, cherry tomatoes, bacon bits, croutons) and Kens light blue cheese dressing to top it all off. Can't beat easy peasy when it comes to dinner especially when there's no cooking involved. Yum!
