Sudden Chicken Salads

I planned on making baked chicken thighs last night for dinner, but then my wife reminded me we had half a head of lettuce in the fridge with other salad fixings, and we have a full weekend coming up along with a three day stint between Memphis and Nashville, so it would probably go bad before we got back from all of that.
So, we decided on salad, which actually worked out because we also had a piece of chicken breast leftover along with some of the cooked chicken we had from a recent batch of taco salads.
So, that's what we had. Dinner salads with chicken, lettuce, onion, tomato, cheese, diced hard boiled egg, and bacon bits.
I had Ranch dressing on mine and wifey had French on hers. What went on your dinner table last night?

I really don't like lettuce. I will eat it if somebody accidentally put it on my burger but really don't like salads with lettuce as a main ingredient. When I was growing spinach, I LIKED that as a salad base.

@DaddyEvil I'm not going to lie, fresh spinach is a very good lettuce alternative, and I'd even say, probably better. Now that you mention it, I would have wondered about that? Lettuce on a burger. Man, to me, that's good eats too, but I can see where that might be less of a good eats factor for you.

Major YUM without the onions of course. I had my usual sandwich and chips. This weekend I will have leftover pizza!!!!

@LindaOHio To me, they can just add so much flavor to practically any dish. Even having onions caramelized with mushrooms over a steak? Man, that's just good eats. Or sauteed onions and peppers on a brat? Yummy.

Oh man, I do love me some salads!!!! It's been a hot minute since I've had a nice dinner salad, I used to make them all the time. I need to get back into that habit. I had pork chops, mashed potatoes, and corn for dinner last night. Followed up with some chocolate chip cookie dough ice dream for dessert.

Oooh , that does look good. I have still yet to try ranch dressing !….Do you make your own ?
Last night we had home made chicken and mushroom pie, topped with filo pastry. Made by my Mom , not by me.
