Mexican Baked Fish

Oh, goodness, it sounds SO good. Darn it, I’m really hungry now, and a hamburger patty doesn’t sound good anymore. My mom used to make something called Fiesta, which was popular with my friends especially. One plate held one ingredient. You took some rice as the base, and then added cheese, salsa, fresh tomatoes if you didn’t want salsa, sour cream, avocado, hamburger meat, and chips (I crumbled mine). It was simple, but filling, and kids could get what they wanted so they weren’t picky. It’s just a variation of a common meal. Darn, now I want THAT.

It must be really good, I also often make fish for dinner, baked with black olives, garlic, cherry tomatoes and olive oil.

My favorite supper meals would be tacos.

I love fish, so of course, this sounds rather appealing to me. As for a favorite? Probably braised pork steaks. But all food I make tastes good to me, and I like to mix it up quite a lot.

My favorite evening meal is anything someone else cooks. I do love casseroles and also just meat and vegetables. Your Mexican baked fish does sound good, though. It is finally cool enough that baked foods sound good.

So many too mention because I like to eat, lol! Comfort foods! Like noodles, baked macaroni, and more.

I am limited to Meals on Wheels, sandwiches and frozen dinners. What I'd really like is some pizza and orange chicken.
