Baked Barbecue Chicken Thighs

Sometimes I really like the simplicity of baked chicken thighs. That's probably why we eat them so often, despite the real reason being they're good, and you can season them up a few different ways, so it changes things up quite a bit. For this batch I just seasoned them with a little garlic powder and some Cracker Barrel Campfire Meal seasoning, then drizzled on some mesquite barbecue sauce, and baked them for about an hour at 350 degrees. I have to say, just for the record, this barbecue sauce, that I got at Ollie's for 99 cents a bottle, is actually surprisingly good. For sides I just made a box of stuffing and we had a salad on the side with cucumbers, onions, bell pepper, tomatoes, cheese and bacon bits. All good eats! I saw a recipe online, that I just have to try at some point. It is barbecued chicken thighs on top of a bed of sauerkraut. Sounds weird, but people say it is very good. I made an Impossible Chicken Pot Pie last night with Bisquick. it was tasty for a change...best thing probably about ,75 per serving..Hell Yes! I love Ollies.

I do pork and kraut quite a lot, but I have never thought to have it with chicken. But how can it be bad, right? I'd be game for this. I think you have caused me to add something to my list. As for your pot pie, man, I love me some pot pies, and yes...Ollie's is awesome.

That looks good and yummy!. It's 6:30 PM here. It would be dinner time in some time. I am not planning to cook as I am alone today. Will manage with leftovers from my lunch time

I love chicken thighs, especially the skin. I usually bake my chicken thighs at 400° between 45 and 50 minutes. Why do you do 350°?

350 just gets them done right for me, and I still get a fairly crispy skin, which I like. I like a lot of foods cooked a little slower. To me the meat comes out more tender and juicy, but it does depend on what I am making.

@porwest even whole chicken I’ve heard of pro chefs going for 400 or even 425 or 450. I usually do 400.

It was definitely exactly what the doctor ordered. I still prefer barbecue on the grill, but baked is good too.

Chicken thighs with bbq sauce is one of my favorites. Since it's cold, nasty and rainy today I decided to make chili for dinner. Definitely planning on having enough left to freeze for future meals.

Those chicken thighs sound lush. I went the other way: prawn stir-fry with extra chilli, quick sizzle and lots of veg.
