Ever since it was invented ketchup has been a well-loved condiment. Americans have long had a love affair with ketchup but what they have actually been eating is a condiment that is Asian. The word “ketchup” comes from an Anglicized form of “ke-tsiap” meaning fish sauce. The actual fish sauce is a pungent brown liquid used in Southeast Asian cooking but European traders who visited Asia in the 17th century also began calling the sauce ke-tsiap.
So this early condiment was actually fish sauce and the British made it by salting and fermenting anchovies. Then they began experimenting using such ingredients like beer, mushrooms, walnuts, and oysters. By the 18th and early 19th centuries many cooks in Britain and some in America had their own ketchup recipe. In 1812 tomatoes were introduced in the sauce and made with tomato pulp, spices and brandy.
By the late 19th century British and American people were using tomato ketchup. In the 1870s a man from Pittsburgh, Pennsylvania added vinegar and sugar. His name was Henry J. Heinz and he also improved the shelf life of this condiment. This was a welcome addition and many still only use Heinz Ketchup. However now there are many different brands of ketchup so the choice is vast.
What would we do with French fries if there was no ketchup? What is your favorite brand?

I have been known to dip fries in horseradish sauce and it's very good. But yes, there's nothing like ketchup for that. I like it on burgers, and I like fries and tater tots with it. I like to drizzle some on my scrambled eggs. There's a lot it doesn't go with, but it IS good eats.
As for having a favorite brand, to me ketchup is ketchup and I get whatever is the cheapest.

@RasmaSandra - Italians prefer fresh ingredients over pre-made condiments. We use nothing with the French fries. With the meat we can serve home made sauces like Sauce Bernaise or sauce Hollandaise for fish. For salads like extra virgin olive oil, balsamic vinegar, and a wide variety of fresh and dried herbs.

Ketchup is definitely a pantry staple for us. Both tomato and banana ketchup. There are so many varieties these days! We usually stick to the original, but sometimes we get the sweet and spicy one too. You never know, ketchup goes with almost anything. As for brands, we usually buy Del Monte, Heinz, or Jufran, though honestly, if something’s on sale, that works just as well!

I don't use much ketchup for personal use. There are a few recipes I make that have a dab of ketchup in them....when I used to have a huge garden, we would make our own ketchup--so, so good! Funny that I am not really in to ketchup much, but I absolutely love pretty much anything made with tomatoes, which are one of my favorite foods.

We don't have a favorite brand. We buy whatever kind is on sale or cheapest at the time we're shopping. I always mix ketchup with mayo and eat my fries with the two mixed together.
Thank you for the history lesson.

@LindaOHio when I did a lot of cooking in my younger days I would use fish sauce for making Cihinese food, It might not smell good but when added to food it is good,

@LooeyVille come to think of it I never tried Hunts. Now I use the Walmart Great Value brand,

This is something that most Italians dislike.
