The coconut muffins are done

The kitchen smells like coconut. I used Bravetart's recipes for "Top Shelf Muffin Mix" and then to make the actual muffins. It is really a cool idea--you mix up a basic muffin mix (flour, sugar, salt, baking powder, baking soda, nutmeg, and coconut oil) and store it in a ziploc bag in the cabinet for use whenever you want to make muffins. Then she has the recipe for making the muffins and all sorts of ways to customize them for whatever flavor profile you want. In all honesty I always just make the mix just before making the muffins but I do like the idea of having it on hand for a quick batch of muffins. The coconut version is basically the regular muffin recipe but you substitute coconut milk for regular milk and coconut extract for the vanilla. I actually doubled the coconut extract because I wanted them to really have a strong coconut flavor. Next up is the lemon pound cake!

I vote for the lemon pound cake! I'd love a slice with a cup of decaf. I'll bet they will devour the muffins.
