Potato salad ....cubed or mashed potato ?

I have just watched a lady on Facebook make a potato salad....in a way I have never seen before .....
In a bowl she had boiled potatoes and big lumps of carrot. She added loads of mayo, then using a hand whisk, she turned it all into ....mush !
To that she added beetroot juice and mixed it all up
The result was purple mush !
When I make it I use boiled small cubed potato, chopped spring onions and mayo ....that's it.
I have never seen mashed potato used before ...
Please my dear MyLot family and friends ...how do YOU make your potato salad ?

I've never heard of mashed potato salad before! I make mine following a recipe I learned while working at KFC. I do use more ingredients than you do but everybody makes their potato salad to suit their own taste.

I have never heard of mashed potatoes being used either ...this lady was from America and supposedly a proper cook !

@Traceyjayne I wonder where she got the recipe from?
Have you ever used boiled cauliflower for mashed potatoes? Pretty made it once. She liked it but I took one bite and was done.

@DaddyEvil I've had mashed cauliflower but would never confuse it for potato salad.

I always love potatoes salad, I just made it not too long ago for my kids.
Firstly I would Boil my potatoes in salted water for 15–20 minutes. Than I mix lemon juice, oil and honey in a serving bowl.
Once it's cooked, i cut the still-warm potatoes into halves or quarters.
Once the potatoes are cold, stir in the mayonnaise, mustard and herbs.

That sounds like a huge mess and not something I'd look forward to eating.
I like my potatoes in small cubes, add a bit of pickle juice to the still warm potatoes and then add the diced onions and mayo once it's all cooled.

It looked vile .....
Seems like we make ours the same except I don't use pickle juice ...never thought of that .

The texture would be all wrong. Chopped onion and sometimes celery and dill relish goes into my potato salad but its chunks of food not a mash.
