Big bag of popcorn chicken

I had a three pound bag of popcorn chicken. It is raw chicken so it is not something I can take and microwave. It says so on the bag.
Actual instructions called for baking all of it together on a baking dish. I made small portions for our salads, then said "what the heck?" and cooked the rest of it on a baking sheet. When it was cool I put it in a plastic storage in the refrigerator.
Today I made a lemon sauce and poured over those nuggets. I used leftover rice and veggies for a stir fry. Bob had been saying he wanted lemon chicken, so we have it now. I did not use a recipe, seasoned from my heart. We are so glad that there is more for us to have tomorrow. It was that good.

We used to buy those frozen bags of chicken. They were delicious!. I used to take a large plastic bowl of chicken pieces with us when we went to watch Drive-In movies in our city. We'd just buy a drink at the concession stand and enjoy the movie(s).

@DaddyEvil I do not remember the last time we went to a movie, let alone a drive in. Those were fun when I was little.

@GardenGerty Taking our own food keeps us from wasting money on the high-priced concessions foods. I'd take drinks, too, but you always want something from the concession stand.

I put enough ginger in it to make it a little spicy.

We had it for lunch today. It was nice to have on hand. We have at least one more time to have it. I put quite a bit of ginger in it as well.

It makes life much easier to cook once and eat two or three times.

That sounds really good, I buy breaded raw chicken fingers and cook them up a little at a time in my toaster oven and even enjoy wrapping some bacon around the pieces,

Cooking it all and having it leftover is a great idea. Cook once, eat twice gets a big thumbs up from me.
Your lemon sauce over the nuggets sounds really good.

The restaurant where we got this over twenty years ago is no longer in business.

Bob does too. I think it is good for us, and it certainly tastes "fresh".
