Good morning May 29

in the sounds of springtime I hear someone outside mowing the grass. It is a little early. Usually you hear that sound later morning or early afternoon here. I just had a small piece of the banana bread I made last night.I used almond flour. And added walnuts You could use any kind of sweetener in it so I opted for a brown sugar substitute. The bread is not as sweet as banana bread usually is, but I think overall is probably healthier with fewer carbs. Have you tweaked any recipes lately?

Recently I made vegetarian meatballs using eggplants, they are healthier and delicious.

That sounds interesting. The trouble with stuff like homemade lasagnas is buying all the ingredients can be costly. I have been wanting moussaka lately

I love banana bread and your tweeks sound like a good substitute even if it's not quite as sweet. Overall I think it is probably healthier so you can eat it without feeling guilty I'm always looking for ways to enjoy my favorite foods by making some substitutions and cut back on calories and carbs. I've been enjoying Premiere Protein waffles for breakfast and switched from regular maple syrup to a sugar free one.

I always put in a bit less sugar than the recipe says, particularly with older recipes.

Sounds yummy. I love banana bread but don't know how to make it. And your way of making it definitely sounds more healthy then the bread loaded down with sugar.
