Another Monday Rolls Around

Happy Monday Everyone! it's more sunny than cloudy here this morning and so far the temperatures aren't too hot yet. Looks like we'll be getting some rain before the day ends and probably stormy weather tomorrow.
I'm sitting here enjoying my coffee and trying to mentally figure out my day. We had a busy weekend so my energy is lacking and I'm just blaming it on being old 
With all these problems going on with lettuce we've had to go to plan B for dinners. It was so easy to just throw some grilled chicken on a salad and it didn't require a lot of thinking, planning or time.
Today I'm going to make a crockpot of chili and we'll have that for dinner tonight. We'll have what we call UN-tacos since we don't put it in a shell. I'd much rather put my chili in a bowl, add some diced onion, shredded cheese and a dollop or two of sour cream. Frito scoops on the side and it delicious and less messy than a traditional taco.
I know tomorrow is generally Taco Tuesday but we're a day early

@Marilynda1225 I was surprised with this one. Although this doctor told her they could probably have another one if they hurry up. She's 42 now so the clock is ticking. I will probably be put in great grandchildren wait mode, myself!!

@kareng whether it's another grandchild or a great-grandchild we always hope that mom and baby do well. Some days I look back and wonder how I gave birth to 4 kids

Congratulations on your new grandson. I miss those days of babies and all the fun of watching them grow up. My grandkids are all older now so I guess no new babies for me until the great-grandkids start coming along.

It's crazy how violent these storms have been. I'm glad your storm didn't cause any problems but it definitely would have scared the heck out of me too.

Chili does sound good. I'm looking forward to some in another couple of months. Have a new recipe I want to try. Mmm. And tacos. I like fish ones with chopped cabbage.

Usually I save chili, stew, soups, etc for those colder months but I had all the ingredients and chili sounded like it would be an easy dinner. The crockpot does all the work and the house smelled good all day long.

My day was uneventful and the weekend breezed on by. I turned 43 on Saturday and we wound up going shopping. George has a new shirt to wear because I am washing it today. I'm curious to see if he'll dig out a Navy shirt to go to the doctor with or wear a nascar theamed shirt.

@Marilynda1225 Don't be. I didn't announce my birthday on here in many posts. The ones I did post about it were after the fact. Hell, I had to tell my husband the date, to get him to say happy birthday.

It was a chill day at work even though it was a bit busy. The people weren't stressed at work which makes me feel much better.

Chili turned out good and the house smelled good with it cooking in the crockpot. Was enough left to freeze for another day. I especially like eating it with those Frito scoops and I pretend they're calorie free

You are wise to stay away from that nasty lettuce.
I was hesitant to buy lettuce the last time I was out, but ours comes from Quebec, and it has been fine.
We're having fresh corn on the cob tonight with shrimp and tater tots that I will do up in the air fryer.
It is storming here right now.

@Marilynda1225 I never use the oven anymore either. Only when I do a roast because my roasting pan is too big for my air fryer. But that air fryer is a God-send.

Your dinner sounds really good and I do love corn on the cob. We haven't had it as much this summer as we usually do for no reason other than forgetting to buy it (duh). Hopefully the whole lettuce situation resolves quickly as I do miss my salads.
I love my air fryer and do 90% of my meals in it. I rarely use my oven anymore,

Nothing fun or interesting here. We just stayed inside and avoided the extreme heat. Same thing again today and tomorrow.

@Marilynda1225 We might get rain that cools some of the heat down. We're still under the Midwest heat dome today. We shall see.

I'd be staying inside too with extreme heat. The older I get the less tolerance I have for really really hot weather,
My upcoming week looks good and aside from storms tomorrow the rest of the week looks fairly nice.

We had a fun weekend as we were at the caravan.
Back home now and The Mister was up at 4am to travel 6 hours to Scotland to work.
Usually, I can get back to sleep, but not today ….im feeling a bit tired now though ….

Your two weeks at the caravan sounded like it was a good 2 weeks away. I bet The Mister wasn't happy about having to get up at 4am to leave for work.

@Marilynda1225 I love being at the caravan …five minute walk to the beach etc ….
The Mister is used to getting up early ….but …you are right …..he is not really happy about it ….i think where he is working now is the furthest from home he has been. There just isn’t anyone closer that can do the job.
