That is a lot of eggs to get scrambled! Having them ready in the freezer must make things easier later on. Sounds like you have been keeping busy with the cleanup too. Hopefully those trees stay under control until the bushes get bigger.

We had a tree growing in our front yard when we moved into this house. I cut it down and we've been mowing sprouts from that tree's stump ever since. I don't think the roots will ever die! Saw my regular doctor this morning. She said she'd have to contact the neurologist to make sure it was okay to take out the staples. She said it looks like it should be but still wants to get the okay from them. She's supposed to call either Monday or Tuesday to let us know. We can do a walk-in appointment once she gets the go-ahead. We've been asleep since we got home from the appointment.

Sometimes I make scrambled eggs with onions, maybe chopped bell pepper, chopped tomato, even a bit of broccoli if I have it. ( Used to add some cheese but now I don't do that very often, and I don't really miss it.) I make extra and use the extra to make a sort of breakfast burrito thing...I spoon some of that in, roll it up in a soft tortilla shell and wrap them separately. They freeze great, and on days we are busy they can be warmed up fast for a decent breakfast.
