Do you enjoy a good moist lemon cake? Have you found that they are hard to find? I love a good moist lemon cake but they are hard to find. I mean you can find a lemon cake but not a good moist one. This recipe is so moist you will want to eat the entire thing yourself…but don’t do it! It is so much better when shared with someone else. This is a great cake to take to family outings. Just be sure to pack in in the cooler until you are ready to eat it. It is so lemony, cool and refreshing for summertime when the heat is really hot. Lemon Refrigerator Cake 1 lemon cake mix 2 sm. pkgs. lemon jello 1-1/2 cup boiling water 1-1/2 cup lemon-lime soda 1 pkg. instant lemon pudding mix 1-1/2 cup cold milk 1 cup whipping cream, whipped Prepare and bake cake according to direction in 9x13-inch pan. While cake is baking, dissolve jello in hot water. Gently stir in lemon-lime soda. Chill in refrigerator while cake is baking. While baked cake is still hot, punch holes in cake with fork. Spoon cool gelatin mixture over cake. Refrigerate. To make frosting: Beat lemon pudding mix with milk until thick. Fold whipped cream into pudding mixture. Spread over top of cake. Chill. Cut into squares to serve. You can garnish each piece with a mint leaf. I think you will enjoy this cake if moist is what you want from your lemon cakes.

This recipe sounds terrific , however I don`t eat alot of cakes , never really have ... I`m not sure why cause I love sweets I just stay away from them , maybe one day I`ll try it it does sound great ... Thanx alot for the recipe ...

Oh this sounds so Good. I used to Love Lemon Cakes, but I do agree that it is hard to find a Good one. Maybe I will consider trying this one out for a Potluck our Church is having in 2 weeks.

Good grief, this is almost like the cakes we made in the 60's! I think all we did was buy a pound cake and poke the holes in it and pour the jell-o over it. You just brought a memory back to my swiss cheesy brain! ~Donna

I live in a very humid climate so If we are not careful everything is too moist and goes moldy very quickly. As far as lemon cake goes well I will pass I do not care for lemon cake at all . ON the other hand I will bookmark this recipe my husband and my daughter like lemon and maybe I can get her to make it sometime.

Hi Anne I think Lemon is my favorite flavor, and if I could have lemon salad dressing on my salad, great, and fresh lemon juice or lemon butter over cooked vegetables smashing, and hollandaise sauce on my steak, and your lemon cake for desert I would believe I have gone to heaven. Then after a meal like this one I would have to go on the lemon aide diet for a month but you know, it just might be worth it.

If there isn't any lemon mix in my location, what is a good alternative? I want to make this recipe but I find the ingredients unique in my area.
