What would you serve with stuffed peppers?

I made stuffed peppers tonight for the first time. They came out pretty good.. unfortunately I couldn't think of much to serve with them. It's one of those all inclusive meals. It had meat, rice, and veggies all in one. But of course a stuffed pepper is not enough to fill a growing child, and we need a little variety on our plate. But I'm clueless as to what would be a good side dish for stuffed peppers. What would you serve with them?

Hi kats..I would serve a salad and some nice crusty bread..You could even just slice some tomatoes which i do all the time. Sometimes I roast them sometimes not. If I serve them unroasted, I usually cut up some red onion with them. The peppers, meat and rice is a full meal and you really don't need anything else, but I always have that feeling too, that i need something else on the plate..Salad always works and who dosen't love some great hot bread?? Enjoy

Might I suggest a garlic, rosemary, and shredded asiago foccacia drizzled with a balsamic vinegar, and olive oil mixture? Tis my favorite after all.

I personally dont eat/make them. However growing up my mom use to make them along with stuffed cabbage. She always served toss salad, fresh bread/dinner rolls, and some sort of light dessert.. Usually jello or mixed fresh fruit. I agree with you and the other post that its kinda a whole meal in itself...

I will probably make cabbage rolls next week with the leftover stuffing from tonight's dinner.

Thank you for the idea.. might try it sometime! I found a great recipe for a cabbage roll casserole which I'll probably try. Instead of rolling the meat mixture into cabbage leaves, you line a casserole dish with shredded cabbage, then top it with your meat mixture, then another layer of shredded cabbage. Sounds so much easier than rolling up the leaves!

What i do with stuff cabbage to make it look like more of a selection for dinner, I omit the rice in them and instead just put hamburg, onion/onion soup mix, and tomato sauce. Then I make like a rice dish seperate so therefore i dont have to try to come up with something to go with it. It works since my daughter doesnt like rice in hers and yet everyone else thinks they are having a more dinner then they really are. Just something else to think of...

I dunno on that one. Perhaps some sort of roll? When I get them we don't give them to the kids cause they are too picky. I just make them as is and pour some spaghetti sauce or ketchup on them. Sorry I'm no help.

I wish I could be that way. But w/ my oldest being on pedisure to maintain her weight as when she was small she preferred to drink her meals rather than eat. So I catered to what she would eat. They all usually eat what we eat she's still the picky eater but I can vary things a tiny bit and we still essentially eat the same thing.

That is understandable. My oldest was very picky until he was about 4.. it was due to our life. I lived with mom, and she didn't cook much, when she did it was like spaghetti or other simple things. My son and I would eat fast food a lot because I'd want to get out of the house, or didn't want mom's dinner, or we had no food, or whatever. So for the first 4 years he pretty much only ate chicken nuggets and bologna and simple things. Then I moved in with hubby and suddenly we were making stuff like tacos and whatever else we wanted. My son would cry when I tried to get him to eat a taco. It took about a week of "eat it or go hungry" and if he didn't eat dinner I'd reheat the same thing for lunch the next day until he ate it, and I'd make him sit there until he ate it (at least take a few bites). After about a week he would at least taste everything I put on his plate, and after having it a few times he'd end up loving it. Now there isn't much the boy doesn't love. Of all the foods he's tried he pretty much only dislikes saurkraut, spinach (but will still eat it) and chili beans (but will still eat it). His favorite foods are onions! He'll eat them raw. I've now learned that if I want him to try something new, I just need to put some onions in it.

LOL, I don't allow my kids to be picky. I'm an "Eat it or go hungry" kind of mom. Thankfully they pretty much hate the same things I do, so they aren't stuck eating something they don't like often.

Whenever I make stuffed peppers I usually make a salad and make garlic bread. I kind of compare it to making spaghetti and meatballs. The only thing I don't like is that 3 of the kids won't eat the pepper only the insides. I tried stuffed tomatoes and they all ate that. And, stuffed cabbage rolls go over pretty well too.

I have not made stuffed tomatoes, but I have done cabbage rolls a few times. Actually since I had so much left over "stuffing" from the stuffed peppers, I decided last week to do the cabbage rolls.. but I made them with a twist. Instead of stuffing cabbage rolls, I shredded the cabbage, put a layer on the bottom of the casserole dish, then piled on the "stuffing" then another layer of the shredded cabbage on the top. It came out so good! The kids would normally leave their piece of cabbage for last and eat it grudgingly, but they liked it this way and they ate the cabbage without a problem at all.

That is a really good idea! I would have never thought of that but I am going to try it. My kids are the same way...they would only eat the insides if I let them. Thanks for the idea!

They were great! I saved the stuffing to make cabbage rolls with it next week.. another dish I have trouble finding a side for.

As I said in the above post.. my kids eat what I give them, like it or not. They aren't exactly huge fans of every meal I serve them, but they will eat it because they know I won't serve them a substitute.

Some kind of bread, or rolls, fruit, or some other dessert. I think they are very filling, and two peppers should fill up anyone. I love stuffed peppers, tomatoes are good too as a cold dish though, stuffed with tuna, onions, and lettuce.

Try serving them with a salad or potatoes. Those are extras that are not already in the stuffing.

It seems to me that it's all inclusive, meat, veggies, rice... I myself would be unoriginal and just serve more of them. And then I could listen to everybody, especially Naomi, complain all the louder that they hate it.

That's what I did.. which is what prompted me to get some advice! I've decided bread or rolls sounds like a good idea. Salad might work as well.

Mmmm, I want a stuffed pepper now! I think serving them with a nice, hearty multi grain bread and a salad with lots of different veggies would be a good combo. I'm hungry just thinking about it!

I haven't made these in years but they used to be a favourite of husband and children. I think that I just made a salad with cheese in it and served it with bread rolls. Maybe there was left over rice on the side - really don't remember

There's always lots of left over rice mixture, which I let the kids have if they're still hungry. I'll probably serve rolls on the side next time!

Good day katsmeow1213, I think stuffed peppers is a complete meal already with ground meat mixed with little rice and also sauted in tomato sauce.The best side dish for that is plain yoghurt and bread rolls.

I would probably go with a sald of some sort, lots of leaves and gratede carrot and apple may be a good contrast to the stufffed pepper.

I like combination of crabmeat, tuna, diced potatoes with mayo and celery to make it as a cold salad dish. I also tried buttered rice and garlic, with minced chicken,shrimp, mozarella cheese, baked for a hot dinner meal.

hi katsmeow when I was still cooking for myself and made stuffed peppers I also baked a potato too, a nd had some sort of fruit for dessert, I imagine with children it might be better to have mashed potatoes and maybe some sort of dessert like a pudding favorite or ice cream favorite. Stuffed green peppers really are most of a meal arent they? but most children loved mashed potatoes or baked ones with sour cream butter and chives. also a salad might be nice as a light filler upper so they get all their vitamins.

My stuffed pepper includes ground beef, shredded carrots and potatoes. My children love them so much. It's one of kind treat for them during dinner.
