Cooking for one is the PITS

I love to cook & love fresh veggies & most everything but when i cook a meal i have to eat it for days. I get soooooo tired of it no matter how much i like it.It is really hard to cook for one & not have leftovers.I'm not real crazy about freezing most things after they are cooked.I like to buy whole chickens because my favorite piece is the back w/the liver cooked in it. To get that then i have to contend w/the rest of it. lol. i make bbq chicken out of some of it, chicken salad out of some of it etc. I would like to get in a leftovers club where u could swap w/your friends. Would u join a club like that?

I would get some individual freezer container or some such. Safe half and have it later. Freeze your favorite veggies and have them in the Winter. I used do all that years back. I don't even cook anymore. And as far as the chicken is concerned- you could stew up the rest and use it for chicken salad, chicken and rice, chicken tacos, etc. I might join a club like you mention.

Good morning & thanks for responding. I have done all u mentioned but when one can of peas will make u 3 meals u get tired of it.lol. I can start making soup when it gets cooler & that's a good way to use up excess veggies.I love homemade soup.

Good day. I used to keep all the juice from the veggies and meat drippings too. Makes for a good base for soup. My granma always had soup on the back burner for whoever came along and was hungry. She was always feeding someone. Used to being in the depression I think.

If you lived out here you would be able to buy chicken back by the pound! I can see how you would get bored though. \perhaps you could make the suggestion to friends or a few people at Church as it is an excellent idea. You would be able to exchange a few meals between you all and this way you would get a variety of meals. I hope that this really works out. Lastly many thanks for the br. I am off to work now ans it is going to be a difficult day. Blessings

Thanks for responding. Hope u don't have too bad of a day.So many people don't cook anymore so probably wouldn't be that much interest.I did share alot w/my neighbors before they quit speaking to me.Sure takes less money since i have quit doing that.Blessings to u, sweet lady.

Sure I'd join !!! I love chicken and if I lived closer I would gladly come for a meal and also cook you one. I like peas too and a can wouldn't have to do us three days only two. Now look what you did, You made me hungry ANTIQUELADY lol Take Care

I have an opposite problem. I feed a family of 7. Packages aren't made for families of 7.. and we're pretty big eaters. Single packages of food can probably feed 2 of us. If I buy hamburger helper, I need 3 boxes. Mac and cheese I need 4 boxes.. even if I'm serving it as a side dish. I need 3 lbs of meat for each meal. And 2 of my kids are still so young that both their portion sizes combined still aren't quite equal to a portion size I'd eat or one of the other kids would eat.. so my problem will only get worse as they get older. In a few years I'll probably have to buy 4 packages or pounds of foods. Leftovers don't happen often.. and if it does it's only because nobody liked it in the first place so it's not going to be eaten.

I used to cook a lot more from scratch when I had the time. These days I make a lot of hamburger helper and microwave meals. It's a bit more expensive, not as tasty, filling, or healthy.. but it's the best I can do most nights these days. I do an occasional meal from scratch now and then, as does hubby. Depends what we're in the mood for that day.

thanks for responding. I know what u mean when my boys were home & always had company i use to cook like that for them. All the kids liked to come to the house because there mom's didn't cook like i did. As expensive as food is now u have to have a big food budget, i bet.I'm like Christmas i cook from scratch.I do think it's cheaper but of course it takes more time & i know u have a busy schedule. I would share w/u & your family if y'all were close. ThNKS FOR YOUR INPUT, cHRISTMAS.

It is great to cook for other people but if just for myself .....I think it is better to get the outside food! hehe..just kidding..me myself prefer homemade food and being single or need to cook for others there is always leftovers. I still finish them even if it took times to do so..Simply said I hate leftovers but still need to eat them~(^^)

hi dear Antiquelady, I can relate to this. Have been on my own for the last weekends and was not motivated to cook something for real at all then. My husband will come home from rehab next week so I am curious about how cooking then will work out for the next weekends. See he has gotten used to eatng less in the rehab plus eat more vegetarian stuff so I wonder how we will manage. We will sure have leftovers from now on but I will then freeze the remaining stuff and have a left over Saturday or such every two to three weeks depending on which leftovers there are.

Thanks for responding. I love homemade soup so i save up leftovers in the freezer to make soup with. The more things in soup the better it is, i think. Be glad when cooler weather gets here so i can make a pot of soup.

oopssss back to your original question, I dont think it would ever be enough leftovers for swapping with friends. We never had leftovers so far and I guess it will only be a few spoons of this and that. But a leftover party with friends would be great. LOL

I would not like to join a club like that because i have IBS and have to be very careful about what i eat. I prefer cooking for myself. You must be used to cooking for alot of people. I have been single and cooking for one for awhile now. Sometimes i just get a piece of foil and put veggies on it and a meat on top wrap it up and bake it in the oven. Make sure the veggies are on the bottom so the juices can get on the veggies. teat from the foil then all you have to wash is the silverware. Easy. More recently i do the same but ina small casserole dish and in the microwave. If you do this add a little water in the bottom. I eat straight from the casserole dish. Easy. Single serving homemade soup. Just get a small pan. Add what ever veggie and meats you like, water and cook. Eat straight from pan. Easy. I hardly ever dirty a dish. Im lovin it.

im sure they do as you have said how good a cook you are and how much people have loved it. i know my sons ex that has been my friend for many yrs. that moved out a year after i got here because we got mad at each other to many times. and she cussed me. we still are friends off and on but i really miss her cooking cause shes a great cook and i sometimes wish she still lived here in spite of the headaches she gave me anyway, now im lucky to have my daughter here. shes a better cook then i ever was.

Hi ya ANTIQUELADY As you know I have kids so I don't ever cook for one. I usually cook just the right amount so we have no left overs but we always have left over chicken. I usually buy chicken thighs and wings so I cook what I need but my youngest son likes to have the wish bone which you only get with a whole chicken hahha. With the leftovers from that I usually make chicken sandwiches the next day and put it into a carrot soup the day after that. Yes I would join a club like a left overs club, sounds like fun!

Thanks for responding. To be honest i always have cooked too much even when the boys were home. I have cut way back just for me but still have leftovers to eat.My oldest always liked the wishbone to & i always fixed it for him. Taught both sons to eat the white meat because i like the dark meat the most.

It does sound like a good idea. I’m not sure if I would join a leftovers’ club; I guess it would depend on who was in it! We don’t have too many leftovers hanging around our fridge because not only I have a constantly hungry husband but a dog who will devour anything placed in front of her!

I'm in Jo! Nothing like some good home cooked leftovers and when you get to eat stuff like you cook..well...that is an added plus. It is hard to cook for one person. Wish I was a little closer

I can imagine that it would be tough cooking for one person, particularly when you are a meat eater. It would not be so tough for me as most of my diet is fresh produce. A lot of my food is not cooked and the food that is, such lentil dishes, store quite well and are versatile enough to easily make new meals out of. I think getting together with a few friends that are in a similar situation and doing swaps is a great idea. Do they have leftover clubs? Or is this just something that you have thought of?

I hate to cook, so I don't do it often! When I do and get tired of the leftovers, I freeze some to have at a later time when I am not so tired of it. The problem is sometimes after I have eaten something a lot I don't ever want it again!

I don't cook, or should say I hate cooking. My husband does all the cooking, and he cooks a lot. I wouldn't mind sharing what we have left over, but I'm hesitant on eating what other people cook. Not saying anything bad other people's cooking, but I have this thing about eating other people's cooking. I guess, I'm weird that way.

if I didn't have so many serious food allergies it might be something, but we really only have enough for a couple of days most of the time, since the roomie and I both eat and since she's lived alone and neither of us every married, we do somewhat better at cooking for one or two... but my mom didn't seem to have too much trouble cutting back on things for one... only thing the roomie ever makes too much of is tuna macaroni salad, but I can eat that for DAYS!

Sorry dear I can't join your leftover club.for obvious reasons! Ha!ha!ha! But that is a great idea and I think those in your neighborhood who have that same predicament should all join that club!But you know I admire you for being so creative with your leftovers.. I know, its really hard to cook for one! It is not really the process of cooking but the leftover problem as you detailed. So during day off and alone at home, I don't cook at all. I am so lazy to cook just for myself. Wholewheat bread, fruits, fresh fruit juice and fresh veggies would be all for me. I also do love fresh veggies but instead of cooking I eat them raw.[em]lol[/em. But of course for one like you who lives just by yourself, it would be too boring to eat all the same food each day.

I think it´s a wonderful idea, but I could not do it where I live. Mine is a great city and noone knows hs nearest neighbor. In a small town it could be done. But probably it´s for the best as I´m a god cook and most of my friends aren´t. Ibet you´d have the same problem, Jo

A club like that sounds great! We can all use fresh ideas and new recipes. Cooking for one is what I do, too, because I love to eat and make good food, but the problem is, indeed, NOT then eating for two, but rather making good use of leftovers so as to maintain reasonable portion control. You are 100% correct re freezing leftovers; not everything holds up well under freezing. "Fresh food, freshly prepared" is the best motto. But it's hard to do due to time constraints, finances, portion control for one, even for a family. Soups, stews, and sauces hold up well, even taste better the next day, but wise and tasty re-use after that becomes a problem, as you have well delineated. While we are all grateful for "food on the table" having the same taste, texture, and look each day can be unappealing.

i cook for myself too pretty much everyday for my loneself. why not freeze the rest if you make to much then you hava delicious meal for another night where u may b to tired. I do like whole chicks too, i tend to invite a friend over so we can share then the leftovers do me for salad the next day. i dont know about swapping food as i can be quite funny with taste and textures, also your tummy migh not stomach what you have ate and be ill, if you do it yourself you know its been made. but i do think some people would enjoy doing that, if you live close by
