Forgetting a crucial ingredient

Tonight I made a crust less pumpkin pie for my kids. My son does not like the crust, so this makes it easier for me with out the waste from him. The pie was baking and smelling good. I took it out when it seemed to be done and let it cool. A few minutes ago I cut a slice out for each of us. They texture seemed a little strange, but I shrugged it off and took a bite anyway...OMG! I forgot to add the SUGAR! So, I sprinkled some sugar on top of it and figured it would work. One bite into it my 4 year old says, "I wish mom had not forgotten the salt too." OMG! I forgot the SALT too! That is what I get for baking while arguing with my son over his homework. Have you ever forgotten a crucial ingredient when baking?

LOL! My thing was baking soda. I forgot to put it in a lot of recipes like bread and cookies. On my favorite banana bread recipe it is asterisked and marked all over - "Do NOT forget Baking Soda!"

I have been almost to the end of making something and realized I had not baking soda before. I tried subbing it for baking powder...Didn't quite work out right.

Yea the slight difference between baking soda and baking powder unfortunately do make a big difference in the actual result. Explained here: http://chemistry.about.com/cs/foodchemistry/f/blbaking.htm You can substitute baking powder in place of baking soda (you'll need more baking powder and it may affect the taste), but you can't use baking soda when a recipe calls for baking powder. Baking soda by itself lacks the acidity to make a cake rise. However, you can make your own baking powder if you have baking soda and cream of tartar. Simply mix two parts cream of tartar with one part baking soda.

Yeah, the baking powder. Really doesn't work then. I don't like crust either. I would not have missed the salt. I'm not supposed to have added salt. Sugar, milk, and spice are really, really necessary. Sounds like a pretty smart 4 year old. My Dad thought he had flour one time, but he had powdered sugar. My Mom had put all the powdered stuff that came in bags in glass jars so the mice wouldn't bite into the bags. But she didn't label anything. He tried to make pancakes, but they wouldn't thicken up. He made really, really sweet eggs with milk in them. Two cups of powdered sugar instead of two cups of flour is really something with eggs, milk, and baking powder. So it could have been worse. Cause and effect, "Don't mess with your Mom when she's cooking. Do your homework."

I like crust once in awhile, but I am ok with the crust less version usually. So did he dump the really sweet eggs or try to cook them anyway?

He tried to cook them and had me taste them before I figured out what was wrong. Really sicky sweet eggs was horrible. He found the flour and tried to rescue it that way. He added lots of flour and we just put butter on the end version with way less maple syrup.

Dang.....I didn't forget but I opened a bundt cake once and started baking it when I realized they had forgot to put in the filling mix. I was ticked! I called the 800 number and they apologized and sent me coupons etc to replace it....the problem was I needed it the next day and I didn't have time to do another one....costly as I had to go the supermarket and get one from the bakery...ouch! They know what to charge!

I know, buying cakes can be so expensive. I would be so annoyed if I got a cake mix like that and they forgot to put the filling mix in it. I am glad that you were able to get a replacement from them.

My nieces were over and I planned on making a cheese pie. I was all set and to my horror I realised there was no cheese in the house. Having gone half way through my recipe I had to put in something and so I put onions instead. It surely did not taste like a cheese pie but I had just created a new recipe!

It sounds like it worked out in the end at least.

Not really. As my nieces would quote that recipe and say how I prepared cheese pie without cheese!

I am not much into cooking nor baking, but yes, I think I forget such important ingredients too like salt which gives taste to the food.

Yes, salt really does make a big impact on the flavor of foods.

I just remember when I was a kid, I made some black tea but instead of sugar I put in salt. Tasted very strange and horrible. I always loved tea. And there have been times I forget to add salt in stews and they taste horrible. Amazing what a pinch of salt can do!

I remember my mom forgetting the flour in a cake once. It was quite funny. She didn't even have to taste it to realize her mistake. One look when it came out of the oven and she was like, uh-oh. I think I was about seven. She was trying to work full time, raise her kids, and cook dinner every night. Much like you!

I learned not to make toffee with the kids around because I will mess up with my measurements or get distracted and burn it.

I probably have but I can't think of anything I'd forgotten like chocolate chips. I do recall when I was a teenager trying to make chocolate chip cookies and I ended up making chocolate chip cake I added milk and I should not have.. if I recall correctly.

I know when I was a teenager I couldn't cook worth a darn. I could see my young self doing something like that if I had attempted cooking more.

Sure and more than once, I have no doubt! The most recent one that I remember is a Mexican Bean and Chicken Casserole that I made for my daughter and son-in-law-to-be. (They are married now). I purchased the ingredients without my usual list as I make this fairly often, came home and began to prepare the casserole. All of the sudden I remembered that I forgot the chicken! YIKES! I was stuck though and had to see it through without the chicken. Needless to say, we had the casserole that night - vegetarian style and I never mentioned a word of it to the two of them. They ohhh and ahhh'd over the casserole and went away happy! To this day, if I had to make the casserole without the chicken I would proceed, but do prefer to have the meat in it. It always pleases!

I am glad it worked out for you. That casserole sounds pretty good actually.
