Have over 13 lbs of leftover turkey.... Help me

We had about a 16 lb turkey for just 2 of us. What can I do with the leftovers. I know turkey soup, and even turkey enchiladas. BUt I know my mylot friends have many ideas for me to use it. Help me....

I lvoe making hot turkey sandwhiches with the leftovers. You take bread put gravy then turkey then gravy ontop. I know my sister loves cheese melted on the top. We usually make turkey soup, I never thought of enchiladas before.

Turkey Manhattans sound good. If you are not familiar with that, it's a slice of bread with mashed potatoes and then turkey on top. Then you smother it with a white gravy.

Beef Manhattans are made the same way with roast beef. The very best way to have the Turkey or Beef Manhattans is with homemade bread. Yum!!!

Wow, free turkey. You can always freeze some of it for later. You don't have to eat it all this week.

BarBaraPrz, that is a great idea. I have a 12 pound turkey to cook with it being just me and the cat I know I will have tons of left overs too! Can you just put it in a Freezer Ziplock bag and put the cooked turkey in the freezer?

I know what you should do with it!!! Send me some. Hahaha. But seriously... I have no idea. We don't have thanksgiving around here and I've never had to deal with turkeys. But I did try to do a search for turkey leftover recipes. A lot of links came up. Haha. There are pot pies, soups, salads, sandwiches, pitas, tacos, empanadas, and lots more... paella even! I make a casserole using zucchini, (you probably can use green beans), stuffing, and turkey. Mix the zucchini or green beans with one can of cream of chicken soup, 1 cup of sour cream and 1 cup of shredded carrots. I put onions in about everything so I add onions. Mix well. Put a layer of your left over dressing on the bottom of the pan and spread the zucchini mix over the top of the stuffing. Sprinkle the turkey over the zucchini mix. Cover with another layer of stuffing and bake in the oven til warm. This will usually make short work of all the leftovers! Serve with the left over cranberry relish.

I don't get tired of having the same thing every meal for a long time so I would cut slices and warm then in the microwave and have them for dinner with whatever vegetables are available. Also, I would slice it to make sandwiches for lunch since I am home every day. My dad used to grind it up and then it could be used like hamburgers or in sandwiches or whatever; this was for the parts that did not slice nicely for just eating or for making sandwiches with.

hi mariaperalta turkey and veggie casserole and blushing pear and cranberry and turkey salad with salad greens just a few of the left over turkey recipes.or I love this one turkey croquettes which really looked yummy in the picture.

You can chop it up, mix it with mayo and some veggies and make it into turkey salad. Or, you could try using finely diced turkey in lieu of salmon in a salmon burger recipe. I prepared tofurkey. I'm thinking that I might add some of it and veggies to orzo this evening for dinner. You could also incorporate it into macaroni and cheese--either made from scratch or a good boxed mac 'n' cheese.

I have made a turkey pasta dish with apples and onions sauteed in butter. Then added left over turkey, and put it all over pasta. It was really good. Turkey enchilladas sound great. I would also think that you could do turkey tacos. Another idea could be to make turkey quessadillas.

Well the soup is a good idea. You can also make turkey salad. So you can have turkey for lunch and dinner. I am no fan of turkey. I prefer chicken. But since you like it I think a turkey salad and soup are good.

We have two turkey thighs, 2 drumsticks, and some white meat still left here. I ate some leftover white meat and some stuffing today for lunch, just cubed the turkey and poured leftover gravy over it and with the stuffing I warmed it in the microwave for 3 minutes tops. I added some black olives after that (I love those). It was yummy! I think there are already some great suggestions here, plus you can look online for some leftover recipes as well. I have only made things like I just mentioned and turkey salad sandwiches with leftovers here. I don't like to cook too much with leftovers.

I usually grind it up and add boiled eggs,mayonaise and pickle relish to make turkey salad sandwiches. Cube the turkey up and put in baggies and freeze! Also, be creative in making turkey casseroles, that you can also freeze. As you can tell I love to freeze food to have at a later day.

I just used about a pound to make turkey stir fry. I added lots of garlic, vegetables, broth, corn starch, soy sauce, and hot pepper. Tastes great!

You've had some good responses here! What about turkey and noodles? You can make stroganoff with turkey or do anything with it that you would use chicken for. When you get too tired of it to enjoy it, pull the meat off the bones (or boil it off) and freeze it in meal size packages. Turkey tastes really good when you haven't had it for awhile!

I only had small turkey left over since I had learnt from previous thanksgiving not to buy huge turkey. They left over turkey we had was use for sandwich stuff with lettuce,tomato and onions it was good and rigth now the only left over we have is the pumpkin pie I don't really like pumpkin pie but since hubby want one I have to get one for him??

hello maria if you have some left over and dont want to waste it, try to top it on pasta dishes. i know meat are excellent toppings for pasta because I sometimes do it with left over chicken.
