Use Coconut Oil when making Waffles!

Wow, I bought a jar of Extra Virgin Coconut Oil to use, because people were saying how healthy it is, and I was trying to use it everywhere I could. When I was making waffles for breakfast (with a box mix) I used the Coconut Oil instead of of the tablespoon of regular oil that the mix called for. My waffles turned out really moist and good! I ate twice as many as usual:) But even better than that, I made some extra ones and kept them in the fridge for later, and every morning I pop them in the toaster and they are still so good and moist.

This is really interesting.I am so glad your waffles turned out so well and keep well for toasting the next day. I am sure they are much healthier than the ones you buy already prepared. I also heard coconut oil was really good for you and bought a jar of Extra Virgin Coconut oil. I saw one of Dr. Oz TV shows where they said it was so good for a person. I have very dry skin in the winter and put a little jar of it in the bathroom and use it on my face. I have also used it to make stir fry. However, the interesting thing is when I check the Health Canada website for healthy oils it indicates that coconut oil is right at the bottom of the list, the second worst oil of all. What do you think of this?

Wow, I don't know what to think of that. I know some people eat the coconut oil by the spoonfuls. That doesn't seem right to me. It would be very high in calories, and I don't like the taste THAT much. I'll just use it in moderation:-)

I think if you refer to "owlwings" response, you will see that the spurge on "coconut oil" by Health Canada is definitely propaganda...and they really need to up-date their website, and their information! I am not dispurging Canada...I am Canadian, but a Canadian that lacks respect for Health Canada and it's departments! Look at the recalls..DUH! As said above; the Coconut Tree is known as the "tree of life"...and I am very concerned about my food. I use, Coconut Oil, Flour, Sugar, Creams..I use it in every form it is available...altho more expensive, I use it frugally. The vegetable oils, canola, seed oils supposedly lower in bad fats, I have used on my long, long driveway to reduce the dust from the prevailing winds that pummel my neighbours. For years, I paid the HIghways Dept. for dust lay, but I was concerned about the chemicals! SO...with all the touting, that these oils were good for us, they should not be bad for the soil, either. WELL, two years later, my long...unpaved gravel driveway..is NOW paved from the oil. It is as hard as the highways....can you just imagine what that is doing to your arteries???

I just read owlwings response. Yes, it is good to use everything in moderation. So I will do that with the coconut oil.

The best price I found was at Trader Joe's Store. A jar was around $6.00 It lasts a long time. You don't pour it like other oils. It's hard, and you take it out with a spoon, and then you can melt it. You don't have to use quite as much as the recipe calls for oil.

The propaganda against coconut oil began to appear in the 1970's and seems to have been largely promoted by the canola/rapeseed, sunflower, corn and peanut oil industries (for obvious reasons). Coconut oil IS very high in saturated fats (over 90%), which include, particularly, lauric acid. Not all saturated fats are quite as 'bad' as they are often made out to be, however. It is said that lauric acid "helps in preventing various heart problems including high cholesterol levels and high blood pressure" ( http://www.organicfacts.net/organic-oils/organic-coconut-oil/health-benefits-of-coconut-oil.html ) Even so, coconut oil should be used in moderation and in combination with other oils. Coconut oil has a relatively high smoke point and is therefore suitable for high-temperature cooking where many 'healthier' oils are not. Coconut oil is also very good for hair and skin care and has long been used for this purpose in India and other parts of Asia.

Thanks Owlwings, I wasn't sure about that, and I was planning on only using it in moderation. It's good to use everything in moderation.

We use mustard oil at the place we live . But towards south, people use coconut oil. I knew that it is really good for your hair but I didn't know that it had healthy values.

Yes of course an oil rinse from coconut tree is always good, Coconut tree is openly called a tree of life. Everything in a coconut tree is really useful and is good for the body not just as food but also as medicine.

I never thought of spreading coconut oil on toast. I'm not sure I'd like that, but I might try it sometime.

I have never used coconut oil. I have canola oil and extra virgin olive oil right now. I might have to try coconut oil sometime. I don't really use much oil at all really.

Hi lilybug, my friend who told me about coconut oil says she stirs a spoonful of it in her coffee instead of creamer. It makes it taste like coconut!

I rarely use coconut oil and never knew how healthy it is til now. If it can make the food that moist then i will tell hubby about it and the next time we cook we can use it if oil is needed. Thanks for the info and conversation this was really interesting and fun to read.

I never realized that coconut oil can be this good for waffles. Now that you mention it here, I realize that it can indeed enhance the creaminess of the waffle. Oooh, I am trying my best not to make one, because if I decided that it's really really good, I might gain back the weight that I have lost!
