Eggplant Lasagna

I really didn't feel like cooking today nor did I want to get (and pay for) takeout. After looking through the fridge I realized I had enough leftover eggplant to make a nice casserole type dish. I simply took the leftover eggplant and layered it in my pyrex baking pan and spread a mixture of ricotta cheese,shredded mozzarella, parmesan cheese and tomato sauce in between each layer. It didn't take long to make and now I just have to pop it in the oven when it gets closer to dinner time. A few times a week I like to have a meatless meal and this fits the bill.

That sounds so very delicious. I simply adore eggplant and have not had it in many years. My Nana made the best eggplant Sicilian style.

Do you bread the eggplants to prepare the Parmigiana in Sicily? We do not in the North.

@TiarasOceanView I thought to remember, because in fact the recipes are two, the southern "Parmigiana di Melanzane", the Northern "Melanzane alla Parmigiana".

Yum! I made lasagna the other night, but oh there was turkey and pork sausage in it. I should try it with eggplant to make it healthier!!

I usually make my lasagna with pasta noodles and some sort of meat (either beef or sausage or both). I had the eggplant leftover so I figured why not use that and it came out really good

@Marilynda1225 My parents grow Japanese eggplants, the skinnier ones . . . I wonder if a lasagna would work with those!

@Marilynda1225 On Sunday I did a roast beef. And its so nice to have some roast beef leftovers for wraps during the week-my husband loves that as he dips it into some of the leftover gravy.

Sounds very good..I have to find something for us to eat later.. Don't know what it will be yet tho as we are very low on food.. but will come up with something.

It sounds good. I love eggplant parm personally. However, the last time I had it, I gained some weight..which is suprising with a veggie dish.

Eggplant isn't always the healthier choice especially if it's fried and covered with cheese. It also has a lot of sodium so maybe that's why you showed a little weight gain

We have have the cutest little eggplants growing in the garden... first time that we have tried growing them and so far so good. will have to remember this recipe :)

I have never grown own eggplants and would like to try one of these years. Homegrown have to be delicious.

We prepare something similar in Italy that we call "Eggplant Parmigiana", in Greece they add meat and it's called Moussaka.

@Marilynda1225 I have noticed that in the United States they do the Parmigiana southern Italy style. In the north we do not bread the eggplants, we fry them and we make several layers of sliced eggplants, a little tomato sauce, Parmesan cheese and mozzarella, never ricotta.

@LadyDuck I just threw in the ricotta because I had it and wanted to make it more like lasagna than the traditional eggplant parm. I never use ricotta in eggplant parm either

Eggplant Parmigiana is popular here too as it's usually just eggplant breaded and fried and then covered with sauce and mozzarella and baked. I love anything with eggplant

Wow. I have never thought to do it this way, but it sure does sound delicious. Whenever I think of eggplant I only ever think of eggplant parmigiana. Not sure why, but I just do. lol
