I prefer using a cast iron skillet over the non-stick kind. With the cast iron you can take it up to a higher heat without ruining the pan (warping it), and it also provides a more uniform, even heat. I also like it because cast iron pans are forever, I have a huge skillet that was my grandmothers, and it's at least 100 years old and still in perfect condition. With the non-stick, you're always lucky if it doesn't start peeling in a few years, and then you have to go out and buy a whole new one or risk eating teflon particles (no thanks!!!) I'd rather spend a little more on something cast iron and have it last a lifetime than to spend on a new teflon pan every time I turn around.

Yes, I keep mine re-seasoned a lot because I use them so much. Another thing I do is to store them with a sheet of waxed paper inbetween them, that way if they're not totally dry when I put them away they don't rust. (You know what I mean? Like how you can towel dry something and it looks and feels like it's dry but it's still moist sometimes?!) Keeping it seasoned properly is what keeps them in teriffic shape. My one Dr said another benefit to using the cast iron is that it always leaches just a little bit of the iron into what you're cooking, and that it is GOOD for your diet to have the extra in it and I don't ever seem to get enough iron otherwise.

Cast iron! I actually loathe the teflon stuff. It's hard to clean and difficult for me to maintain. Even the good brands end up scratched and useless after a few months. With cast iron, all I have to do is rinse out the pans and they're good to go.
I also love that I can use the same pan for a million different uses, with cast iron. I can use the same pan one day for frying things, the next for sauces, and the next for sauteing or steaming veggies and meats.
The only complaint that I have about it is that it's soooo heavy. We currently have a glasstopped stove that I'm always scared of breaking when handling the pots.

I have both and I use both. I like using both the iron skillet and the non stick pan. We don't have a preference either but I do love using the iron skillet to fry things like chicken, and steaks I also make cornbread or biscuits in them, I use it because it can withstand alot of heat without ruining the pan. I use the nonstick for eggs,sauteeing things,pancakes,hamburger helper meals and other things that don't take alot of time or require high heat. I think it is good to have both types of pans.

Definitely cast iron! When they are seasoned correctly they are practically non-stick, and they last forever! Unlike teflon which wears off and you have to throw them away and buy new ones every few years. The non-stick coating isn't good for your health, either, but cast iron lets trace amounts of iron in your food, and most people don't get enough iron in their diet anyway.

Yeah you leave a teflon pan on to long or use them on high heat they get ruined whereas the iron skillet doesn't they outlast teflon and never or rarely need to be replaced. I am using my great grandmothers Iron skillet that she used. I hate when the teflon comes off and ruins foods. Iron skillet can basically do or go anywhere even in the oven or be used at a campsite with no worries of ruining it or having to replace it you take care of your iron skillet/pan and they will last a lifetime and basically outlast any other cookware.

I use both. It depends on which one I grab first mostly.
Did you know that Teflon was accidentally invented back in 1938 when Chemists Roy J. Plunkett and Jack Rebok were experimenting with refrigerants. They ended up coming up with the world's slickest solid. Today, it is used not only on cookware, but also to make spacesuits.

Even I like Cast Iron better. In India, we mostly use Iron skillet or cooking. I found a iron tawa here in US a few days make and now i am making dosa in it only

I like the non-stick teflon better. I just don't know how to care for the cast iron skillet. I guess it's supposed to be oiled? I'm not sure. I messed up the last one that my spouse got for me. It was an anniversery gift and I didn't know how to care for it. So, that thing was history after about a month of misuse! LOL! Now I stick with my non-stick pans and Pam spray.

It really doesn't matter to me. Sometimes it depends on what I'm cooking and how I feel. Bacon seems like a cast iron deal to me. You don't have to worry about your implements harming a nonstick coating.
