Strawberry Shortcake, Huckleberry Pie ... email this discussion to a friend?

Ok, no Huckleberry Pie, but I did make homemade Strawberry Shortcake last night.

I started off making regular bisquick biscuits, but added a little bit of sugar to the dough, then cut the biscuit with two different size cutters (I used the lid from a peanut butter jar for one, and a drinking glass for the other).

I didn't do them quite as thick as I would have for a regular biscuit, because I put the smaller one on top of the larger, so that it could be pulled apart in between to put the strawberries and cream.

I made homemade whipped cream with heavy cream, sugar and just a smidgen of vanilla, then cut up the strawberries and put them right into the cream. Once the biscuits were done and cool, I took the top piece off, lathered the bottom biscuit with the strawberries and cream, put the top back on and added more strawberries and cream.

They were quite big (as you can tell from the picture) and it was all I could do to finish mine, but oh my, it was soooooo good!

A bit different than the traditional Strawberry Shortcake, but it was wonderful. I have another way that I make a strawberry and blueberry concoction with yellow cake too.

How do you make your Strawberry Shortcake? Did you make a special dessert for the Independence Day holiday?

I've been on my recumbent bike every day for almost a week since I got it and I'm doing good, so I'm not going to cut out everything at once.

Been there, done that. Didn't work.

:)

You are right, if you deny yourself too much you will not stick to healthy living patterns. Good for you to be riding that bike.

I make mine in the same way you did if making from scratch. If I am just wanting a simple easy dessert then i buy a sarah Lee pound cake and cut my strawberries up and mash them a little with some sugar (makes a nice juice) and slice the cake pour on the strawberries and enjoy.
Our dessert was leftover birthday cake (my birthday was on the 3rd).

I've done the pound cake thing too, and the one I mentioned with the blueberries is similar, but I make it with a real simple golden cake I found in a cookbook.

I cut it into squares and layer it with the berries and cream in a large parfait-type glass. MMMM mmmm

I make mine with Bisquick too. I do not roll mine out though. I just do drop biscuits when I make mine. I spoon the strawberries and the whipped topping over the biscuits separately also. I have never tried to make my own whipped topping.

myLot reputation of 90/100. Ldyjarhead (5170)   ranked 288 out of 11,094 in cooking  1 year ago

I just flattened the dough with my hand, nothing special. And I usually do the strawberries and cream separately too, but decided to do it a little differently this time.

You've never made your own whipped cream? Oh my goodness, you have to try it and I promise you'll never go back to the stuff in a tub again.

All it takes is whipping cream and sugar. Honestly, the stuff in the tub doesn't even come close.

myLot reputation of 98/100. lilybug (15212)   ranked 4 out of 11,094 in cooking  1 year ago

Nope, I have never made my own. I knew that it was relatively simple to make, I just have never done it. I might give it a try next time though. I don't really like the stuff in the tub anyway.

Hi, no I did not make a special dessert for the holiday, I was working in the evening. sad but only until eight, so I had time to go to the fireworks. lol We had a cookout at work. Hubby was there in time for desert, which was icecream and decorated cookies. Your strawberry short cakes sound very good, and you do so many "from scratch" things. I remember the only time I tried to whip cream it never thickened. It actually is probably better for you than Cool Whip, so I may have to try again soon. I use a yellow cake and make a dump cake. I did do the funfetti cake mix and frosting for the holicay, then also used "pink, white, and blue marshmallow stars. Divided the batter in half, and made two small ones, cause hubby and I do not need much, and gave the other half to my son and family, and they eat too many sweets, but they were happy to have more.

myLot reputation of 90/100. Ldyjarhead (5170)   ranked 288 out of 11,094 in cooking  1 year ago

Honestly, I don't do all that much 'from scratch', but more now than I ever used to.

One trick to getting your cream to thicken good is to make sure that it and the bowl are very cold, and a glass bowl is better. I usually pop the carton of cream and the bowl into the freezer for just a minute or two while I'm gathering the rest of my ingredients.

I've been able to use a wire whisk and even do it by hand. It takes a while and hurts my hands for sure, but it can be done. If you have use a mixer it should only take a minute or two (oh, make sure your beaters are real clean too).

I have one of those little chopper things from Tupperware and even though it's plastic, I decided to give it a try with the mixing blade instead of the chopping one. Worked like a charm.

Hey, I've been here! I just didn't start any discussions yesterday (I don't think). I did answer some, though.

I didn't plant any strawberries this year so these were from the store, but I hope to have some plants in next year.

Don't know how many berries will make it into the house, though.

:)

That sounds wonderful, you're a very creative cook! I think I'll try that with blueberries as I don't care for Strawberries. Too bad, they're cheap and nutritious but I just never did like them. My mom does, though, and she'll really enjoy your concoction! happy

Oh sure, any fruit would work. I imagine you could even used canned peaches.

That's a great idea. I love just about any dessert with fruit.
I didn't make any dessert yesterday but I have some leftover sweetened tofu cream/custard (we're vegan) so I just might make shortcakes tonight. Thanks!

LOL. I'm lazy. It's hard to find good fresh strawberries here after about March, so I buy them when they're in season, slice them up and sprinkle lightly with sugar. Divide them up into usable size containers and freeze them.

Then when it's hot summertime I buy the little shortcakes in packages and "cool whip" type whipped topping. I add a little sugar and sometimes a splash of vanilla. Thaw the strawberries, top the cakes with strawberries and whipped topping. Ta Da. Delish desert and no oven to heat up the house.

myLot reputation of 90/100. Ldyjarhead (5170)   ranked 288 out of 11,094 in cooking  1 year ago

Yes, that would be easier, but what I did only took minutes and I'm telling ya, if you try it fresh, you'll never go back.

myLot reputation of 98/100. thebeaddoodler (2765)   ranked 34 out of 11,094 in cooking  1 year ago

Yeah I would. I told ya, I'm lazy. I grew up with fresh everything, cream straight from the cow, strawberries fresh from the garden, home made sponge cake, the whole works. I don't wanna go back. LOL.

I had shortcake last week... yum. This morning I bought raspberries for a raspberry custard and a cantaloupe.

Anyhow, I do an "old fashioned shortcake" which is kind of like a biscuit, I guess, but more like a sweet and heavy breakfast cake. It doesn't get served with whipped cream... it gets broken up in a dish, sliced strawberries on top, and then served with milk poured over it.

We had iced sugar cookies yesterday with red and blue sprinkles over white icing.

Oh, there's a picture? I followed this from email notication and didn't get to see it yet. I'll bet it looks fabulous!

myLot reputation of 90/100. Ldyjarhead (5170)   ranked 288 out of 11,094 in cooking  1 year ago

Yes, same idea except I had whipped cream instead of milk. Like I said, I started off with regular biscuit recipe but added a little sugar, then put to biscuits together rather than one large one.

I thought it turned out great.

hi Ldyjarhead I do the s ame thing for strawberry shortcake I
make biscuits with a bit of sugar in them, then split them and add whipped cream and strawberries. I was brought on this version and liked it so well that I have made this myself for years . my only special dessert for the fourth was plain old red ripe juicy icey watermelon, but its hard to improve on that. lol

myLot reputation of 90/100. Ldyjarhead (5170)   ranked 288 out of 11,094 in cooking  1 year ago

Oh yes, watermelon is a must this time of year. I did buy both cantaloupe and watermelon last week and cut them up so they are ready for snacking any time.
