Strawberry Shortcake, Huckleberry Pie ...  | |  Ok, no Huckleberry Pie, but I did make homemade Strawberry Shortcake last night.
I started off making regular bisquick biscuits, but added a little bit of sugar to the dough, then cut the biscuit with two different size cutters (I used the lid from a peanut butter jar for one, and a drinking glass for the other).
I didn't do them quite as thick as I would have for a regular biscuit, because I put the smaller one on top of the larger, so that it could be pulled apart in between to put the strawberries and cream.
I made homemade whipped cream with heavy cream, sugar and just a smidgen of vanilla, then cut up the strawberries and put them right into the cream. Once the biscuits were done and cool, I took the top piece off, lathered the bottom biscuit with the strawberries and cream, put the top back on and added more strawberries and cream.
They were quite big (as you can tell from the picture) and it was all I could do to finish mine, but oh my, it was soooooo good!
A bit different than the traditional Strawberry Shortcake, but it was wonderful. I have another way that I make a strawberry and blueberry concoction with yellow cake too.

If I am just wanting a simple easy dessert then i buy a sarah Lee pound cake and cut my strawberries up and mash them a little with some sugar (makes a nice juice) and slice the cake pour on the strawberries and enjoy. Our dessert was leftover birthday cake (my birthday was on the 3rd).

I cut it into squares and layer it with the berries and cream in a large parfait-type glass. MMMM mmmm

| | 3. lilybug (15212) | 1 year ago | I make mine with Bisquick too. I do not roll mine out though. I just do drop biscuits when I make mine. I spoon the strawberries and the whipped topping over the biscuits separately also. I have never tried to make my own whipped topping.

You've never made your own whipped cream? Oh my goodness, you have to try it and I promise you'll never go back to the stuff in a tub again.
All it takes is whipping cream and sugar. Honestly, the stuff in the tub doesn't even come close.

We had a cookout at work. Hubby was there in time for desert, which was icecream and decorated cookies. Your strawberry short cakes sound very good, and you do so many "from scratch" things. I remember the only time I tried to whip cream it never thickened. It actually is probably better for you than Cool Whip, so I may have to try again soon. I use a yellow cake and make a dump cake. I did do the funfetti cake mix and frosting for the holicay, then also used "pink, white, and blue marshmallow stars. Divided the batter in half, and made two small ones, cause hubby and I do not need much, and gave the other half to my son and family, and they eat too many sweets, but they were happy to have more.

Ldyjarhead (5170) | 1 year ago |  Honestly, I don't do all that much 'from scratch', but more now than I ever used to.
One trick to getting your cream to thicken good is to make sure that it and the bowl are very cold, and a glass bowl is better. I usually pop the carton of cream and the bowl into the freezer for just a minute or two while I'm gathering the rest of my ingredients.
I've been able to use a wire whisk and even do it by hand. It takes a while and hurts my hands for sure, but it can be done. If you have use a mixer it should only take a minute or two (oh, make sure your beaters are real clean too).
I have one of those little chopper things from Tupperware and even though it's plastic, I decided to give it a try with the mixing blade instead of the chopping one. Worked like a charm.

ANTIQUELADY (10807) | 1 year ago | now i know where u have been stuffing yourself w/strawberry shortcake. lol it is good, isn't it? my favorite way to eat strawberries is to bake oie crust & eat them over it. i also like hot biscuits w.them to. i make strawberry freezer jam that my boys love. strawberries are hard to beat. the seasom is over for them hear. of course u can still buy them in the grocery but there is no comparison w/grocery ones & fresh ones. have a good weekend. jo

I didn't plant any strawberries this year so these were from the store, but I hope to have some plants in next year.
Don't know how many berries will make it into the house, though.

| | 8. thebeaddoodler (2765) | 1 year ago | LOL. I'm lazy. It's hard to find good fresh strawberries here after about March, so I buy them when they're in season, slice them up and sprinkle lightly with sugar. Divide them up into usable size containers and freeze them.
Then when it's hot summertime I buy the little shortcakes in packages and "cool whip" type whipped topping. I add a little sugar and sometimes a splash of vanilla. Thaw the strawberries, top the cakes with strawberries and whipped topping. Ta Da. Delish desert and no oven to heat up the house.

I thought it turned out great.

I was brought on this version and liked it so well that I have made this myself for years . my only special dessert for the fourth was plain old red ripe juicy icey watermelon, but its hard to improve on that. lol
