I learned from @LadyDuck this morning that it is Candlemas today and people celebrate by eating crepes. I looked up a recipe and found one I could easily manipulate for healthy crepes. My first attempt was a disaster. My second attempt you see in the above picture. No, I didn't roll them and put anything in them, but am eating them much as I do pancakes with unsweetened applesauce on them. They're quite good. This time second time was the charm instead of the third. I haven't had crepes in many years. Did you make them today in celebration of the day? Thanks for reading.

Congratulations and do you celebrate, too? By chance, my husband ordered a small stack of pancakes as a side order to his omelette this morning.

Thank you. No, I don't celebrate it. I didn't know about it until this morning. That was luck. Next time I'll make these along with my omelet. I wanted pancakes today, so this worked.

I haven't had crepes in quite a while myself. Not sure if I ever attempted to make them..if I did, I bet they didn't turn out well!

Well done Valerie, your crepes look great. I never roll them, I fold in 4 and pour hot orange sauce on them.

@just4him The classic French crepes Suzette has the orange sauce and the liquor poured at the end, then you lit the crepes. A bit dangerous, but beautiful to see.

I put strawberries over the last of the batter. They were good. I've never had orange sauce.

We often have pancakes, but they don't look like that. What did you do to make them 'healthy'? They look as if they are full of bubbles!

I used almond flour instead of all-purpose flour, and ghee instead of butter. I also omitted the salt. They were, most likely because I used almond flour. But they are good.

@just4him We just make the one type but we put different fillings in them, meeaning we put the filling on the crepe and roll it up - maybe prawns in a white sauce for savoury but peaches if we want a dessert.

Didn't know about this celebration, but now I definitely want to remember it because I love crepes . I'm planning to make a cake using 20 crepes, but I need a looooooot of time for this cake. Maybe I'll just make some japanese pancakes...

@just4him they are similar to regular pancakes, but very fluffy . Tried to make them once so far, mine weren't that fluffy, but still delicious .

@just4him I knew it was a symbol of the Sun, because they are round and golden. I did not remember the Pope used to gave the pancakes to those who went to Rome on that day.

I don't know what crepes symbolize with the feast day. I learned from @LadyDuck that it's the day Jesus was presented in the temple.

I occasionally make crepes for breakfast. I put a little orange extract in the batter like my great-grandmother used to do and I eat them with just butter on them. I use my great-grandmother's crepe pan too.
