A Bag of Rice and a Can of Soup

Most of us fall on hard times at least occasionally. I know I have. Times when I had to decide between paying the water bill or having something to eat, and payday being a week away. Of course, the choice wasn't that hard. Food had to be eaten, we couldn't go an entire week without food. I filled plastic jugs with water for drinking, water for washing, and water for flushing. The fridge was full of water jugs. One of the bathtubs was full of cleaning and flushing water. The next morning, the water was turned off before the kids went to school. The water bill is the least expensive in the household budget. Usually around $60 a month. Granted, $60 doesn't buy a lot of groceries these days, especially if your tastes are somewhat picky, like children can sometimes be. I have found out though, that food you don't care for tastes a lot better when there's nothing else to eat. With that money, I bought a big bag of rice, 2 gallons of milk, a large jar of peanut butter, some store brand cream of (insert flavor here) soups, two loaves of bread, a bag of breakfast cereal, some cheap paper plates and other disposable flatware and silverware. (No water. Couldn't wash dishes.) I also bought a bag of bacon bits and 2 dozen eggs. I had a little left over for later if needed. Gas for the car, or whatever. The bacon and eggs were gone first, then the bread and milk, and on down the line until we were left with the dry rice and cans of soup. I cooked the rice and let the kids pick a can of soup. Their favorite was cream of chicken. When the rice was done, I mixed the can of soup in with it. We ate. We liked it. We got our bellies full. Tonight, I didn't want to go to the grocery store. Not because I didn't have the money to, I was just feeling lazy. My son said "Hey Mom, remember that week we were poor and you made that rice stuff?" "Yeah." I answered He replied, "Let's have that again." So I looked in the cabinet. There were a few small bags of rice in there. We also had a large can of Campbell's cream of chicken soup. I made the meal. We ate, we liked it, and our bellies got full.

This reminds me of my "poverty meal" discussion. Mom hated it when we had it, home made sugar syrup and pancakes from a "complete" mix so you just added water. Me, I love pancakes, but it is because they are a choice. I would eat the soup and rice myself, for an easy evening.

I have had that too. Actually, its pretty good when that's your choice. Just no protein to keep the blood sugar level even.

I've been in that position too and feeding the kids always was the priority. There were many nights we ate pancakes.

Pancakes are always a good standby, but I worry about the lack of protein.

We love rice and cream of chicken soup, chicken and stars also goes very well with rice. Sometimes you just have to choose whats more important, I would rather feed my children as well, sounds like you got the water situation handled well.

Wow! $300 for a water bill? That seems outrageous. Did you have a leak or something?

I'd be cool with that - I love my rice! Rice is great for stretching out meals as it goes with nearly everything. Even though times may be tough, good memories (or recipes) can still come out of it .

You did good with little or no money. I have had to do that a few times when I was raising my children. I always bought pasta and sauce, bread and peanut butter. You can stretch foods a long ways when you have to.

Thank you. Yes, you really can. Its too bad we don't do this when we don't have to. Maybe we wouldn't get in predicaments like that.

We ate a LOT of rice and "slop" when the kids were small. I was very good at coming up with reasonably healthy meals on a very tight budget. I can only imagine how many pounds of brown rice and homemade chicken "slop" we consumed. I could get three full suppers out of one small chicken.

Aw... I am touched..and reminded of the days I skipped meals. Not paying bills was never an option because there is a minimum charge that is payable for the connection. Moreover, our utility charges are not as high as yours. So I could definitely not have bought as much as you did with what I could save on water bill.

I'm spoilt, I don't think I've ever been that poor. Those are very wise words - food you don't care for tastes a lot better when there's nothing else.

Were you impacted by the hurricane last year? Are things getting any better? What is it really like? I only know the little bit they show on TV.
