After talking with another member here I realized that Mediterranean diet may look confusing but I can assure you that it is for sure one of the easiest diet to follow.
Just forget processed food and start to cook your meals from the raw, it may give us more work but we also gain more health.
My dinner today was a typical Mediterranean dish, grilled codfish, potatoes in the oven with garlic, olive oil and cabbage.

We seem to follow the Mediterranean diet without even thinking about it. Your dinner sounds delicious to me.
Tonight, we are having a salad with lots of organic vegetables that my sister-in-law dropped off and adding chicken and beans for protein. We only have red meat about twice a week, and chicken and fish the rest of the time. Cod is one of our favorite types of fish. I always try to have a new fish when we go out to dinner. I had yellowfin snapper Friday night and it was delicious.

A Mediterranean diet has many veggies, they are easy to make. You are right: it can be followed with no problem.

We always cook from raw ingredients. That way it is more healthy and far better for you that eating processed food!

you can tell it's so healthy. i'd eat that.
i think other factors is one, you grow your own fruits and vegetables so they're organic, and two, how you cook your food, grilled and baked.

I cooked eggplant with tomatoes and egg. I boiled the eggplant first then sauted it in garlic and onion.

Diets are easy--keeping off the weight is hard!! (From a professional dieter!) Also you have to realize the Mediterranean people have a different lifestyle which also helps them stay healthy!

The Mediterranean diet definitely has some healthy food choices, Fish, Vegetables, fruits, nuts, seeds, legumes, potatoes, whole grains, breads, herbs, spices, seafood and extra virgin olive oil. Fish/seafoods are a real favorite of mine and are low in calories and saturated fat. Also eating seafood can decrease the risk of heart attack, stroke, obesity, and hypertension. Thanks for the tip!
