In my oven this morning

I put salt and pepper and my favorite homemade spice blend in it. I had some toast with butter with it. Of course a cup of coffee. You can use raw spinach but this time of year I had frozen spinach, that I thawed in the microwave. I oiled my dish, put ham and spinach in, poured beaten eggs over it--with salt and pepper, etc. Baked it. When it was all cooked I put the cheese on top to melt. At the table we had salsa with it.

@GardenGerty Oh ok...I have never tasted spinach like that. Though I do not eat ham, eggs, and cheese, but I gotta try it out and see whether dad is ok with it. I thought you all eat greens as greens. I mean raw. In the movies they show green spinach. Like salads.

It was quite good. Even hubby liked it.

@GardenGerty I like eggs, we usually eat eggs for lunch.

It did help me stay good until noon.

We did. I may make more later this week. Leftovers warm up well.

Those early schedules make things hard.

Yes. That way we could finish errands while we were out and not faint from hunger.

Hubby liked it too. It was a good change of pace. Something good to do with the ham.
