In my oven this morning

I have made a breakfast casserole,consisting of ham and eggs and spinach. When it was all done, I covered it in cheddar cheese. I am hungry and I hope it is really good. I like to eat something pretty substantial for breakfast before we go to church.

How do you eat that? With bread or some sauces? No salt, pepper or sugar...spinach you cook in oven?

I put salt and pepper and my favorite homemade spice blend in it. I had some toast with butter with it. Of course a cup of coffee. You can use raw spinach but this time of year I had frozen spinach, that I thawed in the microwave. I oiled my dish, put ham and spinach in, poured beaten eggs over it--with salt and pepper, etc. Baked it. When it was all cooked I put the cheese on top to melt. At the table we had salsa with it.

@GardenGerty Oh ok...I have never tasted spinach like that. Though I do not eat ham, eggs, and cheese, but I gotta try it out and see whether dad is ok with it. I thought you all eat greens as greens. I mean raw. In the movies they show green spinach. Like salads.

Oh yum! I wanted to do something like that but Hubby had to work all weekend and started rather early. Maybe next weekend.
