Just made dried porcini and fresh mushrooms soup

I just made a huge pot of mushroom soup. I turned the soup off and am letting it sit. I hope it will develop more flavor as it sits. It will be out dinner tonight. I will serve it with fresh cilantro and a dollop of sour cream. Can't wait to dive in. I used dried porcini mushrooms that I had soaked in water and fresh crimini and Portobello mushrooms. Other ingredients I used are leek, onion, carrot, celery, potato, pearl barley, and butter. Everything aside from pearl barley and potatoes I sautéed in the skillet prior to putting it in the pot. I added salt, rainbow peppercorns, and bay leaves. For the liquid I used water and the liquid the dried porcini had soaked in. I don't know exactly when I got to the kitchen to make the soup but it seems I've been here for many hours. I am a bit tired. There is enough soup to last for three days and I may even have enough to share with my parents.

@lovebuglena If it's like stew, it'll be more flavorful. Mushroom though very good for your health, it's bland in taste.

I sure hope so. Can't wait to try it after it's been sitting for a bit. It wasn't that flavorful originally for some reason.

I've made it a few times but I don't think I've ever made it from dried mushrooms.

Cooking once and the cook is enough for three days, that's good. You can save your time later since you can still without cooking anymore.

@lovebuglena Fresh porcini are a lot better, they grow in the woods around us, but this is not the season, you find them from July to the end of September.

Not a fan of the taste of these particular dried porcini. But I love porcini mushrooms. Fresh ones are probably better.

It is much better now flavor wise than it was originally. Guess the longer a soup sits the better it gets. I thought that was mainly true for cabbage soup but I guess it's true for any soup.

Can't say I am a huge of the taste of these particular dried mushrooms. My parents brought them from Cape Cod. But I think she said they are from Chile. The soup should me much tastier but it was still good.

It was pretty good but I wasn't such a huge fan of the dried mushrooms. And I wonder why there were so dark. Usually they are lighter, much lighter.

Thank you. My rest is mylot and Swagbucks. I already completed my first daily goal on Swagbucks, thanks to a few surveys I was able to do. It sounds delicious. I make a mushroom soup with carmelized onions and barley sometimes, but I use a chicken broth base for the liquid to add some flavor, or vegetable broth if I have it. I really like barley and mushrooms together.

I love soup in the winter. Today I am making chicken corn chowder.
