Fried Rice from Leftover

Sorry if I am making you hungry again. The photo is my fried rice from last week. I will make it again tomorrow as I have leftover boiled rice again.
I think I am making fried rice every week from leftover rice. I always make it from scratch as I use the ingredients that I have in the fridge. Sometimes, I add bacon, ground pork, chicken flakes, longganisa (Filipino sausage) or with corned beef together with the vegetables that I have.
If you have to make fried rice from your leftover boiled rice, what do you add in it? Maybe you can give me another suggestion what to add next time.

I made fried rice yesterday with our leftover rice too! My kids like it with just carrots, green onion, and eggs . . . it is how one restaurant had it and they won't have it any other way. Hubby and I like fried rice with kimchee and Spam in it - but we eat fried rice with anything in it. You stay safe and well too!!

@DaddyEvil Mashed potatoes??? That I've never tried - but hmmm, that gives me ideas 
. I've had kimchi with cream cheese though as a vegetable dip though (I think it's a Hawaiian thing). My friend introduced me to that . . . just chop up some kimchi and stir it into cream cheese with some of the juice. I thought it would be gross at first, but it was pretty darn good! I guess the strong taste of kimchi with bland foods pair up well.

Have you ever tried kimchi and mashed potatoes? I liked it. (Several years ago a friend invited me for dinner. She made rice to go with the kimchi but knew I couldn't eat rice so she made mashed potatoes for me.)

@much2say I wasn't sure how it tasted with rice, so had nothing to compare it to. I thought it was good. I had a second helping. (Please let me know what you think.)
Oh, as a dip? I don't like cream cheese that much.

@rebelann Yes, I am almost done for today on Mylot. I have to sleep early tonight as I will be working tomorrow. I am having a wonderful evening on my balcony again. Before I go to bed in a few minutes, I will water my plants. It is almost 10 pm here and it is not yet dark. The clouds are looking like cottons above me.

I’ve never thought to add some of those things in my rice , it’s usually plain white rice or Mexican rice

Just what I had today, I made rice and then fried some scrambled eggs and added the rice and some soy sauce and fried it all up , It was good,
