As I may have mentioned, I bought a bunch of healthy veggies when I went grocery shopping with my friend Mark a week or two ago. He and his wife are trying to lose weight, so we went healthy. I bought some leeks, which I'm not sure I've ever cooked with before. My step-mother made a great leek soup back in my late childhood days. The other day I made a tasty lunch using leeks, olive oil, a bit of water, onions, a touch of garlic, and some salt an pepper. What I did with them was something between frying and steaming. It was actually pretty good. I'm going to keep experimenting with leeks. My friend gave me some chicken bullion cubes, so I may try for something "soupier" next time. What are some of your "healthy" foods?

Leeks go great with mushrooms or zucchini. I sometimes put them in an omelet. I love salads. This week I used napa cabbage in a salad instead of lettuce. To that I added red radishes, diced apples, sweet vidalia onion, dried basil, toasted sesame seeds, and olive oil and sea salt. Some days I also added mini cucumbers to that.

@lovebuglena That sounds good too. But I may start with a simple "scramble" involving leeks, zucchini, a bit of onion, and some cheese. I don't often buy mushrooms.

My healthy foods? Mushroons, zucchini, eggplants, pumpkins, onions and garlic, also fruits, I like fruits.

I eat all veggies other than potatoes, tomatoes and beans. I can eat broccoli and dark greens in very small amounts occasionally. I thought leeks were the same as onions. I eat a lot of eggs.

I really don't cook leeks much but your experiment with leeks looks pretty good. I try to eat healthy too and mostly I've changed to roasting vegetables with just a sprinkle of olive oil and a little salt. No more dousing my veggies in butter

I'm very partial to leeks. One of my favourites is a leek and spinach tart with goats cheese. Sadly I can't grow them any more because of problems with a new pest, allium leaf miner.

We never use leeks either but I have had some great leek soups from time to time.
